Vegan waffles


I made these on Saturday morning for breakfast. We had them with applesauce, honey, sliced bananas, and cinnamon. Bobby also had an orange soda, because we didn’t have orange juice. I told him he was crazy.

Vegan Waffles

Ingredients
1/2 banana, mashed (slice the other half for toppings)
3/4 cup water
1/4 cup soy milk
1/2 cup oatmeal
1/2 cup flour (I used half whole wheat, half white)
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice

Directions
1. Mix together wet ingredients (banana, water, milk). Stir in the dry ingredients, but let the batter stay slightly lumpy.
2. Spray the waffle iron with cooking spray and cook the batter according to the iron’s instructions. I had to cook mine for longer than the waffle iron told me to cook them. After the waffle iron says they’re done, wait at least 1 additional minute.
3. Serve with fresh fruit, applesauce, syrup, honey, or cinnamon. Yum!

Sorry for the late post, but Bobby is here! We’re having a great time just hanging out, eating, and enjoying the beautiful weather we had this weekend. We ended up eating out Friday, Saturday, and Sunday, so we haven’t done make-your-own sushi night yet. But hopefully we will do that tonight – it’ll be nice to have a night in. Grilled Cinnamon Oranges

These gems are grilled cinnamon oranges. The recipe and method couldn’t be easier, and they taste fantastic.

Grilled Cinnamon Oranges

Ingredients (each orange serves 1 person, so double/triple/etc… as you like)
1 fresh, juicy orange (you need good oranges for this)
1 teaspoon sugar
1/2 teaspoon cinnamon

Directions
1. Turn the broiler to hi. Mix together the cinnamon and sugar. Cut off the very ends of the orange (where the stem was and the opposite side), then slice in half.
2. Place the orange halves on a baking sheet and sprinkle each with the cinnamon sugar mixture. Place the baking sheet under the broiler for 5-6 minutes, or until the sugar browns and caramelizes. It’s important that you don’t place the oranges too close to the broiler – otherwise, the sugar will caramelize but the orange won’t be warmed through. Try using a rack in the middle of the oven.

Earth Day and veggies


Happy Earth Day! I don’t have a new recipe for you, but I do have pictures of some beautiful organic vegetables that I’ve been cooking with.

I’m going to join a CSA (Community Supported Agriculture) with two other members of meeting, D&D. When you join a CSA, you pay a certain amount per week to receive a share of fresh, organic vegetables from local farms. The one I’m joining is called Two Small Farms. D&D already recieve 1/2 of a share, so they get their fresh vegetables delivered once every other week. Once Bobby and I join with them, we’ll get a delivery every week and split it.

I really encourage everyone to look into local CSAs. Joining is a great way to promote sustainability and be environmentally conscious. If you want to help make our earth a greener place, go out and celebrate Earth Day by joing a CSA!


This past week D&D brought some extra veggies from their share to meeting for me to have. There were some greens called spigariello, fresh oranges, mint, and purple cabbage. I decided to make a variation of the delica Spinach Salad (pictured below) as well as my Classic Coleslaw (above). For the spinach salad I just substituted spigariello. For the coleslaw I used 1/2 a head of cabbage, 4 carrots, and one medium white onion as the base.

I also made grilled cinnamon oranges, which I’ll post tomorrow. The recipe is simple, quick, and quite delicious.

I really like the idea of breakfast for dinner. My favorite kind of breakfast is something heavy on the carbs – oatmeal and waffles are my favorites, but I also like french toast. Having your carbs later in the day will also help you get to sleep faster. As long as you don’t eat them too close to bedtime (try to allow at least 3 hours before you go to bed), those carbs from dinner will have you off to dreamland almost as soon as your head hits the pillow.
