Easy but impressive fruit salad


I made this for a potluck yesterday – I had no time and nearly nothing in my kitchen but managed to pull together this dish. It’s impressive-tasting, but surprisingly simple.

Tropical Fruit Salad

Ingredients
1 mango
2 bananas
1 orange
1/4 cup fresh mint leaves, roughly chopped
freshly squeezed lemon juice from 1/4 of a lemon
honey (optional)

Directions
Chop the fruit and mix all the ingredients together. This is so good!

I had extra mint leaves from my spring roll experiment, so that’s why I threw them in. The lemons are (again) fresh from the backyard. Add any other fresh, seasonal fruit that you can find – strawberries would be really great here, and they’re just coming into season! Navel oranges are everywhere, and I love them in fruit salads. Just make sure that if you get oranges with seeds that you take the seeds out.

  2. I was just thinking about fruit salad the other day, and I remembered one that I made last summer for a barbeque. I can’t remember the exact fruits (must have been some blueberries, peaches, apple..maybe more), but the ‘dressing’ I concocted was really yummy: I used fresh, local honey from the farmer’s market, some lemon juice, and a few fresh, organic lavender flowers. The subtle floral hint of the lavender was AMAZING and the fresh honey just brought it all home…Try it sometime!!!
