Fried Plantains

This is a great dessert. Okay, it’s not super-healthy. But it is fruit, and much better than a lot of the cakes and pies that we might otherwise eat after dinner!

You can use ripe or unripe plantains; the cooking will make them sweet enough. If you want to substitute bananas, make sure they are not overripe, and don’t use as much sugar. Bananas are already quite sweet on their own. You’ll have to be gentle when you’re sauteing as well, because they are much more fragile than plantains.

Fried Plantains (serves 2-3)

2 plantains
3 tablespoons sugar (white, brown, or mixed)
2 teaspoons cinnamon
1 tablespoon oil (olive oil works well)

1. Peel and slice the plantains. Mix together the cinnamon and sugar, then add the sliced plantains.
2. Let sit at room temperature for at least 10 minutes; up to several hours. Mix them around again.
3. Heat the oil in a pan over medium heat. Add the plantains and saute on each side for 3-4 minutes. Serve plain, with ice cream, or with yogurt.
