Vegan waffles

I made these on Saturday morning for breakfast. We had them with applesauce, honey, sliced bananas, and cinnamon. Bobby also had an orange soda, because we didn’t have orange juice. I told him he was crazy.

Vegan Waffles

1/2 banana, mashed (slice the other half for toppings)
3/4 cup water
1/4 cup soy milk
1/2 cup oatmeal
1/2 cup flour (I used half whole wheat, half white)
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice

1. Mix together wet ingredients (banana, water, milk). Stir in the dry ingredients, but let the batter stay slightly lumpy.
2. Spray the waffle iron with cooking spray and cook the batter according to the iron’s instructions. I had to cook mine for longer than the waffle iron told me to cook them. After the waffle iron says they’re done, wait at least 1 additional minute.
3. Serve with fresh fruit, applesauce, syrup, honey, or cinnamon. Yum!
