Mom’s black bean salad

Moms black bean saladThis recipe is from my mom. She fights developments by day and cooks amazing vegetarian meals by night. She’s a fantastic civil engineer and she loves her job. I hope that I can find that kind of satisfaction in what I do.

This recipe is great for cleaning out the pantry. Throw in whatever beans you have and it will turn out well. It’s nearly impossible to mess up. I actually modified Mom’s recipe slightly. I added green beans and carrots, and soy sauce to the dressing, because I always add soy sauce.

This salad is pretty awesome. I made it last night for dinner and for lunch today I mixed it with cooked basmati brown rice and stuck it in the microwave for about 45 seconds. Yummy! Love your blog…
