Mom’s black bean salad

This recipe is from my mom. She fights developments by day and cooks amazing vegetarian meals by night. She’s a fantastic civil engineer and she loves her job. I hope that I can find that kind of satisfaction in what I do.

This recipe is great for cleaning out the pantry. Throw in whatever beans you have and it will turn out well. It’s nearly impossible to mess up. I actually modified Mom’s recipe slightly. I added green beans and carrots, and soy sauce to the dressing, because I always add soy sauce.

Mom’s Black Bean Salad

1 can black beans
1 can chickpeas (garbanzo beans)
1 can corn
1 can chopped green beans
5 small carrots, diced
1 finely chopped red pepper
4 sliced scallions
cumin (I forgot!! but I added it later)
1 cup chopped cilantro (use at least 1/2 cup, I love cilantro so I used more)
3/4 cup lemon juice and vinegar (use half each)
1/4 cup olive oil
2 tablespoons soy sauce
lots of salt and pepper

1. Rinse the beans well and mix everything (except the dressing) together.
2. Mix together the dressing ingredients. Add to the salad and season to taste. Enjoy!
