No running today! My body is TIRED. I went for a 50-minute walk this morning, which I’m guessing was about 3 miles. Then I did yoga, and made breakfast. I was so happy with yesterday’s breakfast that I decided to make it again:
- 1/2 acorn squash with a drizzle of olive oil, 2 egg whites scrambled with 2 teaspoons of sugar and cinnamon, topped with 1/2 banana and 1/2 cup of applesauce
- a small pink lady apple (unpictured)
We headed out to the farmers’ market after breakfast – it’s about a mile away. Bobby got bread, but we didn’t get anything else besides some delicious samples of fresh fruits.
Bread total: $4.60 (1 big slab, 2 ciabattas)
After we got home it was time for lunch, so we headed out to one of my favorites – Pho Vi Hoa, a local Vietnamese restaurant. Dad had never had Vietnamese food before and for his entree he chose Pho (Vietnamese noodle soup) with beef meatballs. He said it was the best meal he’d had since he’d visited! I was so happy that he liked it. This was his treat, so we’re not counting it towards the Thanksgiving challenge. Last night was his treat too; Friday night was our “one night out” that we are allowed per week.
A note about my dad – my brother is vegetarian and my sister is vegan, so my dad rarely gets meat at their house. I decided to give him lots of healthy meat options this weekend and he gladly took advantage of it.
For my lunch I got the papaya salad with shrimp, and I also had a lot of my dad’s broth from his meatball soup. It was so good, I couldn’t stop eating it.
We went to Milk Pail for groceries for the week. Total: $14.41
This brings our Thanksgiving Challenge Total Week 2 to: $19.01
Thanksgiving Challenge (altogether) Total: $54.05
I’m not too worried about going over; we’re visiting Bobby’s family for Thursday through Monday of this week and we won’t be paying for any of those meals. In addition, most of the stuff I picked up today will not be used this week and can last until next week. And we still have a meal to out for this week, but we probably won’t use it. I think we’ll be okay!
For dinner we ate in.
- butternut squash fries with lots of organic ketchup and the pear & crab salad that I made last week for the BSI (double this plate – I went back for seconds)
- sauteed cabbage with pasta sauce and smart ground fake meat (I made WW pasta for the boys)
- veggie plate
And then for dessert I tried my very first honeycrisp apple! I was actually kind of disappointed – I prefer my pink ladies. But it was very good, and I’m glad that I got them 🙂 They were on sale at Milk Pail (local open air market) for $1.29 a pound which was crazy and irresistable. I will probably have another one tonight if I get hungry again.
I also had frozen mango (times 2):
Tomorrow morning I’m taking my dad to the airport and heading back to work. I had a great weekend and I am SO glad that my dad got to visit. I can’t wait until the next time I see my family.
What was your favorite thing that’s happened to you in the last day? I’m trying to be more appreciative of the little things that make me happy, and I’m wondering what makes all of you happy as well. My favorite thing was when my dad loved my butternut squash fries at dinner tonight. Silly, I know – but that’s my answer. Have a great night!
you’re doing great with the challenge!! i’m very impressed! it seems your dad’s visit was a total success – and how fatastic that he is so health-conscious too! those butternut fries DO look really good. i love vietnamese, and i especially love pho!!
the favourite thing to happen…. i went out for a lovely lunch with my mum yesterday, and last night we sat cozily on the couch watching some silly TV, since my dad is away and sister is at school – i love spending time with her 😀
So glad yyou had fun with your dad! I’ve never had Vietnamese, but it looks super delicious.
My favorite thing from yesterday was going for a walk with my parents in the nice warm fall day! It’s good to stop and think about these things!

Hi! I saw your comment on my blog about the guest post! I would love for you to do one! Drop me an email and we will work out the details! Fun!!!
Sounds like you had a fabulous weekend with your Dad! And $1.29 a pound for Honey Crisp Apples?!?!?1 I would have bought a TON!
My Favorite things was my race! I still can’t believe I averaged 8:46 for over 6 miles!!
I cannot decide if that breakfast is more sweet or savory! Haha, whenever I think eggs I think savory, but I’ve never scrambled them with cinnamon and sugar… hmm… ideas ideas. My favorite thing that happened in the past day was when the yogurt I had put in the freezer came out the perfect consistency- last time it was way too frozen… dorky? perhaps, but it made for an amazing dessert which I needed after a rough day.
I think spending time with my family has been nice these past few days!
And I think you’re doing quite well with the Thanksgiving challenge! Cheers!
That papaya salad looks AMAZING – and so do those homemade butternut squash fries!
Glad you took such good care of your Dad :^)
My favorite thing is the beginning of cooking a meal when the onions are sauteing and they smell so warm and savory and the expectation of a yummy meal permeates the whole kitchen.
ohhhh! 50 minute walk my goodness…do you listen to music while you walk?! an ipod? that’s such great news you had an awesome trip with daddy-o! 🙂 papayas are such an exotic fruit-you make it look scrumptious!
That’s quite a bargain for those apples!
This is weird, but my fave thing today was getting up early. I ate fruit, drank tea, and read blogs. It was nice. 🙂
I’m so glad you had a good time with your dad! I love it when dads come to visit 🙂 The Vietnamese food sounds great – I love Vietnamese food!
Favorite thing from the last day? I just got a very exciting new part-time job that I am absolutely PSYCHED about!!
