I’m in the Houston airport on the way to Miami! I have time for a quick post though.
Yesterday morning I did yoga for 40 minutes on my own. So relaxing.
Breakfast at work:
- 1/2 cup oats, ~2 cups water, 1/2 cup soymilk, 1/2 banana
- honeycrisp apple
I was suddenly ravenous mid-morning so I broke out part of my afternoon snack:
- Blueberry Zbar
The Zbar was very satisfying and held me over my hour long walk before lunch… Which was:
- 1/2 acorn squash
- 2 egg whites with sugar and cinnamon
- applesauce
- slightly less than 1/4 cup cashews
- pink lady apple
- cauliflower and green pepper with Trader Minh’s sesame soy dressing
I was crazy busy all afternoon and didn’t get a chance to eat anything until I was on the way to class. Can you guess what I had? An apple! That’s my lovely steering wheel. I drive a very cute Civic. I grew up with Hondas.
Dinner was a simple affair. I had to use up the other half of my squash from this morning so I rubbed it with some olive oil and stuffed it with some sauteed cabbage, smart ground (1 serving), red pepper, onion, and carrot. There was soy soy sauce and various spices too, including cinnamon. And I topped it with organic ketchup.
And then I had the most amazing dessert. I had this pomegranate sitting in my fruit bowl that was over a week old and I knew I had to use it. I dug out all of the seeds and made…
- 1 pom’s worth of pom seeds
- 1/2 cup espresso flavor soy ice cream
- 1 tablespoon wheat germ
- 1/3 cup unsweetened applesauce
I melted the ice cream a little bit before I added it and I mixed this all together. It was so amazingly good. If you ever have these ingredients you NEED to make this dessert.
And of course I can’t go to bed without an apple. So I had 2 apples (only one is pictured) with about 1 tablespoon of almond butter.
This morning I was up at 4am (after going to bed past midnight!) to make our 6:15 flight out of San Jose. Our incredibly kind friend (and Bobby’s business partner) drove us to the airport. THANK YOU!!! I packed lots of food last night so that 1) we wouldn’t have to eat airport food and 2) we could save money for the Thanksgiving Challenge. My bag is full of apples, bars, and other snacks.
On the plane I had 2 apples and a Chocolate Brownie Zbar (my favorite). We actually got free breakfast on the plane so I saved the cereal (Total) and raisins for later. Now we’re at Houston and so far I have had:
- 2 Kavli crisps with smart balance and raspberry spread
- carrot sticks
- 2 Kavli crisps with a whole sliced banana
I think I’m going to try to go for a walk in the airport now. We aren’t boarding for over an hour. I can’t wait to get to Miami and see Bobby’s family again. Hope you are all having a lovely end of the week. It’s almost Friday

Mmm gotta love a day full of squash!
That dessert truly does sound amaaaaazing. Pom seeds just seem to go well with everything.
I just recently tried those Kavli crisps for the first time. I love em! I’ve got a whole nice pack sitting in my cupboard to eat up.
