Vegetarian update and some good eats

So far my attempt to be vegetarian has gone really well.  I’ve been at it since the middle of December (I don’t remember which day exactly).  I’m not eating meat or seafood.  And I’ve been able to stick with it!  It’s probably nearing a month now.

Here are some of the lovely vegetarian things I have been eating…

Peppermint Bark from Williams Sonoma…

Breakfast for dinner – egg white French toast topped with full-fat yogurt, strawberry maple syrup (heavenly), 1/2 an apple, 1/2 a banana, and an apricot… (this was tonight)

Sweet adzuki bean soup (Japanese thing) over full-fat yogurt and a chopped apple

Plain old full-fat yogurt with chopped apple

And salad, of course!

I’m currently obsessed with full-fat yogurt, if you couldn’t tell.  What is your current food obsession?

  1. Mine is boring, but it’s apples. I have a big bowl of apples in my dorm dining hall and I eat at least three a day. It’s weird.

    We’re so close to each other! we should have lunch one day!

  6. love the FF yogurt. i dislike fat free food. i wish chobani had a 2% kind rather than plain. yuck!!!!!

    currently i love vanilla silk………… and wraps!! i like them wiht PB, for a pizza, with tuna salad, tofu, everythin’<3

  7. Great eats today! Yummy peppermint bark! Right now I’m obsessed with PB and banana. I don’t think I’ll ever get over this!

    i’m obsessed w/ anything pb…but actually, i think right now it’s carrots and hummus. joy!

  12. Congrats on the veg progress. My new host mom is a vegetarian too so I’m hoping to have an easy time with meatless French foods :) … and so far so good. Current obsession? Brie.

  15. I’ve had a real thing for eggs lately. And I’m trying to eat less peanut butter (it’s gotten to be 1/4-1/2 cup every day… way too much, even if it is PB2!).

    Good for you with eating vegetarian! Your eats look great. Also love the FAQ page (Gina Kolata is fantastic, isn’t she?)

  16. I LOVE Williams & Sonoma Peppermint Bark! When it is in front of me I eat it all! And your french toast looks really amazing. And my current food obsession is pumpkin butter!

  20. my neighbor gave me peppermint bark for christmas- its so good!

    My food obsession right now is smoothies. and quesedillas, healthy ones.
