I got up this morning feeling refreshed… but with no voice. This cold is bugging me. I went for more of the Firm: Cardio Dance video (on Exercise TV; 25 minutes) and followed it up with YogaDownload’s Detox Yoga #1. It felt amazing.
Then I got adventurous with breakfast – pumpkin oat bran! I have never actually mixed pumpkin into oats/oat bran before and I was really excited… until I tried it. It was boring and blah. The peanut butter partially salvaged this bowl, but I will not be making pumpkin oat bran again.
- 2/3 cup oat bran, 1.5 cups water
- 1/2 cup pumpkin
- 1 tablespoon natural peanut butter
- pumpkin pie spice, sea salt
- almond milk (added post-picture)
I’m headed out to Lite for Life in Santa Clara. It’s a specialty shop that has lots of cool products, like PB2, which I have been dying to try. I’ll let you know what other goodies I get!
Bobby found this really interesting article last night and I thought I would share it with you. A new Cornell study (my alma mater) found that over the past 70 years, the Joy of Cooking’s average calories per serving has jumped 63%!
The study looked at 18 recipes that have been continuously published in the Joy of Cooking and they tracked the nutritionals over time. Kind of crazy, right? Are our cookbooks making us unhealthy now too?
The other night I looked up to see this:

I’m a fan of PB2 in baking and in smoothies.
In oatmeal and toast though, I stick with the real deal bc of its consistency..
sorry that you didn’t like the pumpkin oatbran combo. maybe try to use homemade kabocha puree? it might sweeten it a little bit more.

I read that same article, and I was amazed! I wonder what the differences are from the original edition. My parents still have the one they received as a wedding present in ’77–perhaps I should compare!
I’m betting the serving sizes are bigger in the cookbook.

Yeah, I bet the servings are bigger these days. I have a really old Betty Crocker cookbook and noticed how small servings were in it.

Oh and something I like to do with pumpkin in oats is to add half a banana and really mush it around.

Pumpkin does need sweetener in my opinion. I don’t like it all by itself, but it’s really good mixed with hummus and used as a salad topper. My favorite salad dressing!
PB2 – can’t wait to hear what you think. I like how you can control the amount of water, and I make mine really thick. I like it better than Better’n PB.
