Menu Plan Monday (vegetarian/vegan/macrobiotic)

mpm2-1Menu Plan for the Week of February 22 – February 28

Dinner ideas: (some are recycled from last week; when I was sick I got lazy and didn’t make everything I’d planned on)

  • Whole wheat pitas with nut butter
  • Brown Rice Tortillas with cheddar
  • Salads
  • Grainy blends – oat bran, or whipped wheat berries

  • Oat bran or oatmeal with cinnamon, banana & nut butter
  • Kamut puffs, almond milk, and fruit
  • Miso Soup (1 cup boiling water, 2 teaspoons miso, handful of wakame)

More great menus can be found at Organizing Junkie!

I ate some Greek yogurt at midnight last night when the macrobiotic experiment was over… but I woke up bloated and full-feeling.  I think I might have to try staying away from my beloved yogurt for a while longer.

Enjoy the Oscars and have a great night.  What’s on your menu plan this week?  Anything new?

  1. Fabulous! I really need to start bookmarking some of your specific posts…maybe that will be a Spring Break option…start compiling recipes in a more organized format…

  2. i lovee jap chae!!! that’s one of my favorites!! if you like spicy you should put some jalapenos it’s really good in there with some fried tofu!

  3. Your menu sounds so wonderful! I think we have really similar tastes and dietary choices. Kabocha fries – YUM. And I love jap chae. Your menu has totally inspired me!

  4. Menu looks awesome. I have been wanting to make vegan mac and cheese for a while…I have this powdered non-dairy cheese in the cupboard that I might try to use this week. I seem to recall you have made this before? Or am I making things up? Haha. Either way, any tips? 🙂

  5. I see so many asian dishes, love them!!!
I haven’t planned specifically what dishes to make, but I did plan what food I’ll have. 😀

  6. Your meal plan looks good. I wish I was that organized. What one fast meal would you recommend for me to try this to get out of my rut?

  7. NOM NOM! Yes, I do have some new things! I tried one of them last night, and tonight I’m making a cool side dish…actually I think there are 4 new things on the menu. Oh la la!
