I’ve seen this on a lot of blogs but namely HEABS and Gena are my inspirations here. I have made a whole bunch of variations on this, but this is the basic recipe. I’ll show variations below.
Massaged Kale Salad
Ingredients (serves 2-3, or 1 salad girl)
- 1 bunch of kale
- 3 tablespoons olive oil (I know; it’s a lot – you don’t need this much though)
- 1/2 avocado
- juice from 1/2 lemon
- splash of balsamic vinegar
- chili powder, salt, pepper to taste
- 1 shredded carrot
Directions
- Remove the kale from the stems and rip it into pieces. Pour on the oil and add the avocado and massage them all together.
- Add the spices, vinegar, lemon juice, carrot, and mix some more. Serve!
Some variations – any kind of shredded veggie will do in place of carrot. I’m trying to cut down on my orange food consumption because I got the dreaded orange tint. Oh, well. Haven’t had kabocha in probably 2-3 weeks now, but I probably still eat enough carrots to still be orange. You definitely don’t have to use as much olive oil; I change it up depending on my mood. If I use more, I might not finish the whole salad in one sitting. More oil does make it really delicious though.
I had it one night with some pork and a whole hunk of sauerkraut.
I’m trying to eat more (organic, free-range) meat for various reasons, and this meal was a major success. Be back soon!

I’m not a huge fan of kale (especially raw), but if you, Gena, and HEABs says it’s good, I believe you all 😉 I’ll have to try it sometime!
i love massaged kale salads! i’ve made them before without adding any oil at all. sprinkling sea salt on the kale before massaging it releases all of those juices and really makes the kale break down. but the flavor of olive oil is always delicious, so adding some definitely gives it that yumminess!

hahha my mama makes AWESOME garlic kale (just stirfried together in chicken broth) without even reading blogs…too bad i don’t have her sense of creativity. She also made a REALLY simple 2 ingredient kale salad, literally kale and balsamic, which my brother detested. hahaha but I’m on your boat Maggie!! I love that salad you made!! Dinner looks awesome…really….i’m with you on the eating as much organic & free range meat as possible, but that gets pricey! Unfortunately!!!
P.s. I love orange foods too, my mom has warned me that i’m beginning to turn orange. 😛
love the “serves 2-3 or 1 salad girl.” sometimes i wonder how people will react to the portion sizes of my veggie recipes, since they tend to be, well, large.

I had massaged kale once when HEABS made me a raw lunch :). It was marvelous!! I have yet to recreate it but thanks for reminding me about it. I will definitely have to make some soon. Hope things are well. Off to make a watermelon smoothie….

I absolutely love sauerkrat–I am surprised by how many people hate it!
I see!! I should have only use the leaves instead of the whole thing!! That stem always difficult for me to chew as a salad.
