Time for some Friday Fun Foods!
Here is a vegetarian breakfast:
- pita + tomato + avocado + cheese (grilled)
A vegetarian lunch:
- pita French toast (whole eggs + almond milk + cinnamon), honey, cream cheese
- spinach sauteed in butter + cream cheese
And a pescatarian shrimpalicious dinner:
- 2 sweet potatoes cut into fries with coconut oil and ketchup
- shrimp and spinach cooked in butter and peanut dressing
Sometimes I think my blog should be called “Better With Butter”. Do you have funny blog-name ideas? (For your blog or for mine.)
I am off for some R&R. And Burn Notice.
Happy Friday! (I have a bunch of great Saturday Links for tomorrow, so come back in a day.)

That all looks completely scrumptious. I love the idea of PITA french toast, that is a super way to use up the slightly overly old pitas hanging around in my freezer, doing so asap!

I think I live by the motto that everything’s better with butter. Not a butter substitute, but the real thing. Everything looks delicious, as you know I’m a slave to avocado.
Hope you have a great weekend!

Gosh, I eat nut butter with everything…seriously! Like, I don’t know why…but I do..it goes in EVERY meal and snack (and I have it at multiple meals/snacks). I go nuts with nuts. Not necessarily a good thing.
Avocado, hummus and avocado are crazy good combo in and off everything.
Hm…not sure about blog names…currently I am in MAJOR debate of whether to start a new site or not cause I want a new name (but want the title to match the domain name). Its tricky casue I dont want to lose readers or some of my current content. But I also kind of want to start a new one, etc. So, its a big iffy for me now.
I like your blog name/layout.

The sad thing is each meal looks completely delicious, and I don’t think I have a single ingredient for it in my kitchen; and THAT means it’s time to go do some shopping. Those meals appear just a little teentsy for a big fella, so I’m going to have to do some ‘MINDFUL EATING’ to keep from running out and grabbing a large order of fries to go with it. THANKS!

loved everything here
yesterday for “brunch” becasue I never made it to breakfast, I made a whole wheat tortilla, layered it with leftover grilled squash, and a roasted red pepper, avocado, a big hand ful of spinach and a bit of gouda cheese.
grilled with a schmear of butter.
YES butter and coconut oil are my favorite oils EVER.
and it was goood.

Your shrimp dish looks very good

I never thought about spinach sauteed in cream cheese. That sounds DELICIOUS! Actually, all of your food looks really good. Somehow, your pita sandwich looks WAY better than mine do (even though I use the same ingredients).
Have a good weekend

Cool idea to French toast-ize pita bread! Love it.

Looks yummy!
What type of pitas do you use/buy? I love pitas but have been having a hard time finding the josephs oat bran ones I used to buy so I’m on a mission to find a new staple.
Thanks!
