I am a little bit hesitant to post this recipe because it’s not really an ideal food creation in my mind. What do I mean by that? Well, it’s a low-calorie, low-fat dessert that’s very voluminous. But why is that bad, you ask? Because (to me) it’s reminiscent of a frankenfood, and I think we should all be eating normal stuff.

So why did I make it?
I used to be a big fan of the lite ice cream fad. Well, I had been ever since I discovered calories (!). I don’t remember when that was… sometime early on in college I believe. Unfortunately those ice creams still have lots of sugar and if I have too much, I break out. And anyway, I’d prefer a McD’s cone over fake ice cream any day. But one day I was home and didn’t feel like running out for a cone, and didn’t want a sugary dessert, so I made this. And it was pretty good! A decent amount of protein and volume but not much else.
De-Lite-Ful Tofu Pudding AKA Vegan and No Sugar Tasti Delite!
Ingredients
- 1 package light silken tofu
- 1/2 teaspoon cinnamon
- 1/2 teaspoon NuNaturals vanilla stevia drops (one dropperful)
- 1/2 teaspoon NuNaturals cocoa bean extract (one dropperful)
- 1/4 teaspoon salt
- 1 teaspoon lemon juice (optional)
- sesame seeds for topping (optional)

Directions
Blend all ingredients except sesame seeds in a (mini) food processor. Adjust extras to taste. Top with sesame seeds if you so desire!

I’m not a huge tofu person, but I eat it occasionally. I much prefer fatty cuts of meat.

i’ve made tofu pudding & i really like it! it’s smooth & creamy & packed w/ protein! i don’t think it’s frankenfood at all! thanks for a great recipe!

i love tofu pudding and ive been putting tofu in my oatmeal regularly for awhile now, for extra protein. the soft lite tofu is so versatile! puddings, oats, smoothies…such an easy way to get protein. ive gotta say…the chocolate tofu pudding is my fave version.
@clare: Oh wow, I never even thought to put it in oatmeal! That sounds good. I have also been meaning to try making a creamy salad dressing with it as well.
