Time seemed to get away from me in July! And now it’s already August. Lots of things to update about with respect to the last couple weeks, but here first is a recipe for you. It happens to be dairy-free (not vegan though – eggs).
Sunday French Toast Recipe
Mix together 3 eggs, 1/2 cup coconut milk (trader joe’s – new product), some stevia, chocolate extract (or vanilla, or whatever), cinnamon, and (optional) 1-2 tablespoons of PB2 (or peanut flour?). Soak 8 slices of manna organics bread in the mix for about 30 minutes. Cook the soaked bread on medium heat on a griddle until the bread is cooked through and not soggy at all (~5 minutes on each side).
We had ours with veggie bacon (Bobby), OJ (Bobby), peanut butter (both of us), and honey (both of us). I also sliced up a cucumber and put some salt on it so we had a vegetable. We gave Bo a lick of peanut butter and he wandered around the house licking his lips for a good 10 minutes. This peanut butter (from Trader Joe’s – you can see it in the picture) is delicious and incredibly tongue-sticking.
I’m loving my new iPhone. My Android was either lost or stolen and but I’m happy now because this new phone is so much better. I’m Instagram-ing everything.
