Goodeats for 9/22/2008

Happy first day of fall, everyone!  It is now officially my favorite season.

This morning’s workout with the first video of Jillian Michaels’ 30-Day Shred Workout.  Again.  I tend to do the same workout until I get bored of it, then never do it again.

Breakfast:

  • 1 apple
  • 1/2 banana
  • Dannon 0% Plus
  • 3/4 cup cheerios

Lunch:

  • leftovers – butternut squash and carrot dish
  • 3/4 cup greek yogurt with leftover peanut sauce (I love this stuff)
  • 1 WW wrap
  • big salad with green peppers, shredded carrot, and iceberg (all farmers’ market) – topped with a random ginger dressing (I’m out of Newman’s Own)

  • 1 diet pepsi

I had most of the salad before my hour-long walk, then came back and finished the rest of my goodies.  I am loving the butternut squash + yogurt + peanut sauce mix.  I’m going to have to figure out how to make my own peanut sauce now.

Snack:

  • 1 fresh nectarine

  • 1/2 Kashi bar – Honey Almond Flax flavor

I had my first nutrition class tonight at De Anza College.  I’ve decided to audit the class in order to save some money, but I plan on doing the assignments anyway.  The major assignment is to journal your food for three days and analyze it – not so difficult after this blog!  The professor seemed to think it would be very difficult for some people.  If I do decide to pursue a degree in nutrition or another health related field, I’m not sure if this class would count towards anything which is why I’m not taking it for credit.

Dinner:

  • “pizza” on a WW wrap – tomato sauce, peppers, onions, zucchini, shredded carrot, and cheese!

  • salad – iceberg, heirloom tomato, green beans, peppers, onions, bacon bits (vegan!) – topped with some homemade honey-dijon dressing and the ubiquitous leftover peanut sauce (it’s almost gone)

Dessert:

  • 2 apples (I went back for another one 😛 ) with leftover peanut sauce

After all of our errands, we were starving.

Snack:

  • cauliflower and 1.5 carrots (this is a dinner plate, so it was lots of veggies)

  • broccoli

  • hummus (of course)

I made dinner with the delicious butternut squash that Bobby brought home for me last week.  The recipe will be up soon.

Dinner:

  • cherry tomatoes from our balcony
  • butternut squash and carrot dish (plus 2nds)
  • 1 cup of greek yogurt, topped with leftover peanut sauce from last night

Dessert/Snack:

  • nectarine! (yes, that is Eat, Pray, Love in the background)

  • cauliflower with hummus (a good bit more than pictured!)

Eats for 9/21/2008

It’s the last day of summer and everything is beautiful.  The weather is perfect, the farmers’ market was fresh and full of amazing produce, and I’m just in a great mood.

I got up this morning and did Jillian Michael’s 30-Day Shred workout – I think it was the first one.  It was 3 circuits of strength, cardio, and abs.  Very fun, and I could tell that I got in a good workout even though it was only about 20-25 minutes.  After that Bobby and I walked a mile to the farmers’ market, did our shopping, and walked back.

Snacks – samples (mostly fruit) from the farmers’ market (no pic).

I forgot to mention what I got at Kohl’s yesterday!  I got 2 napkins, 2 placemats, a tablecloth, a bunch of candles, and some beautiful hand-painted Mexican dishes.  I got a humongous salad/pasta serving bowl and 2 mugs – they have pretty little chilis painted on them.  The placemat, napkin, and tablecloth make an appearance below…  I’m obsessed with fall, so I love getting fall-themed house stuff.

Lunch:

  • 1 fresh peach
  • 1.5 cups Fage 0%
  • peanut sauce from last night (1 Tablespoon-ish)
  • 1/2 WW wrap with more peanut sauce

This lunch was an awesome combo.  I’m upping my protein, so I picked a small peach and used extra greek yogurt.  The wraps that I buy are also protein packed (for a wrap) – I think they have 8 grams per wrap.

Lots of errands today – returning some clothes, buying a present for someone (I think he might read the blog, so I don’t want to say…), and trying to enjoy the last bit of the weekend.

One more thing of note – I have abs!  I have no idea when they appeared, because it seems like it happened overnight.  All this working out and yoga has definitely paid off.  Before a month ago I would just walk, a lot, but it never gave me good definition.  I’m going to try to keep up the habit.

More eats for 9/20/2008 and a new site!

I spent yesterday and today getting this new site set up – comments and suggestions are welcome; I plan on redoing the theme and making it my own in the next few days.  But onto the food!

Snack:

  • 1/2 WW wrap
  • 1/2 cup Fage 0%
  • cinnamon

Dinner:

  • lotus root salad – fried tofu, lotus root, basil, fish sauce, carrots, caramelized onions
  • 1 veggie spring roll – vermicelli noodles, lettuce, basil, tofu, and sprouts dipped in delicious peanut sauce and a bit of spicy hot sauce

  • a few veggie bites from Bobby’s chow mein (unpictured)

Snack:

  • nectarine
  • 1/2 cup Fage 0%
  • peanut sauce from dinner

Late night snack:

  • apple!
