Remember how I love Delica so much? Delica is that awesome Japanese delicatessen located in the Ferry Building in San Francisco.

I finally figured out their recipe for the Spicy Burdock Root Salad. Their salad has lotus root, but I was all out. I subbed in water chestnuts instead. Theirs also has mizuna (a salad green), but I didn’t have that either so I just left it out. The ingredient list looks long, I know – but it’s really very simple. Texture is really important here, so make sure the onion and celery are both sliced very thinly. My mandoline helped me achieve the awesome textures, but a grater would work just as well; so would a lot of patience with a knife.

I kid you not – this will be the best salad you ever make.

FYI: Konnyaku is a Japanese yam… it’s the base of shirataki noodles. A block of konnyaku has 0 calories (just like true shirataki noodles – not the tofu kind). It’s great for digestion and overall health. I get mine at my local Asian markets. It’s next to the miso. I would also check near the tofu, or near the refrigerated noodles. If you can’t find it, I guess you could substitute a different veggie or maybe some seitan.

Maggie’s Spicy Burdock Salad

Ingredients (serves 4-5 normal people… or 1-2 crazy salad eaters)

2 cups of burdock, sliced up (I used a mandoline)

1 block of konnyaku, cut in small slices (or a different veggie or seitan)

1 small can of water chestnuts (6 ounces)

1 tablespoon oil (sesame)

1 inch of ginger, grated

chili powder and/or chili flakes, to taste (optional)

1 medium onion, finely sliced (mandoline)

4 stalks of celery, finely sliced (mandoline)

1/4 cup rice vinegar

1/3 cup water

1 tablespoon stevia (or other sweetener, to taste)

1 carrot, shredded

1 tablespoon sesame seeds

2 tablespoons Bragg’s liquid aminos (or soy sauce)

salt & pepper, to taste

Directions

Boil the konnyaku slices in water for 5 minutes. Drain and rinse.

Heat the oil in a pan (wok) over high heat. Add the ginger and saute for 1 minute. Add the burdock, drained konnyaku slices, water chestnuts, and chili powder/flakes. Saute for about 5 minutes. You can reduce the heat to medium-high if you’re nervous about burning. When the burdock is tender enough to chew, remove it from the heat and let it cool.

Mix together the water, vinegar, and stevia. Soak the sliced onion and celery in the mix for 5 minutes, then drain.

Combine the burdock mix, the onion/celery mix, the carrot, sesame seeds, Bragg’s, and salt and pepper. Top with more sesame seeds, if desired. More sesame seeds are always desired by me.

Om nom nom. Bobby and I devoured this. He actually said it was *better* than Delica’s salad. You MUST make this. If you are scared of any of the ingredients (burdock! konnyaku!) – don’t be. Burdock is amazing for you. Burdock health benefits: it’s good for the reproductive system, the skin, the digestive system, and it’s even anti-cancerous. Other burdock or konnyaku recipes:

I adore Asian/Eastern food. I love eating with chopsticks (way cooler than forks). If it were up to me, I would probably eat Japanese, Korean, Vietnamese, and Thai food for every single meal. Oh wait… I pretty much do The only difference is that I eat oatmeal or oat bran instead of rice, and I eat squash every single day. (Sounds kind of like a cool vegan lady I know.)

What are your weird food quirks? What is your favorite food (cuisine or dish)?

Stay tuned for a silly picture and updates from this weekend’s apple picking adventures!

On Wednesday Bobby and I were up in San Francisco again for a job interview (Bobby’s). We had to go to Delica rf-1 again; we go there almost every time we are in SF. Delica is a sweet little Japanese deli/delicatessen with takeout foods. They have salads, bento boxes, soups, and other cute Japanese dishes.

I got almost the same thing as I did last time (3 salad combo), except I doubled up on the Spicy Burdock Root Salad (A spicy mix of braised burdock and konnyaku (mountain potato) tossed with thin slices of white onion, celery, julienne carrots, and wild mizuna), and got a single a serving of Hijiki and Soybean Salad (Hijiki (seaweed rich in calcium, iron, and fiber) mixed with dried soybeans, edamame, konnyaku (mountain potato), daikon, wild mizuna, fried tofu, and kuko (wolfberry)).

Bobby got the 2 salads + 1 main item combo (like last time). He opted for the Spicy Burdock Root Salad (this is our favorite), the Wasabi Garlic Potato Salad (Garlic potato salad with wasabi mayonnaise, edamame, snap peas, and romaine hearts), and for his main item he got Sweet & Spicy Chicken (Marinated chicken, lightly fried, served with sweet & spicy sauce).

We split that iced tea.

I made my rice cooker oats again for breakfast one day this week…

This time I topped them with chopped dates and a whole bunch of sesame seeds. I love adding sesame seeds to oats – they give a nice chew and crunch. I couldn’t decide which picture I liked better.

Have you tried rice cooker oats yet?

You guys had some really good input about my post regarding rest days. I continued my pattern of unintentional and/or fun workouts the last few days – I had my accidental 5 mile walk on Thursday, yesterday I did 20 minutes of Tom Morley yoga and about a mile of walking (I consider yesterday a very lazy day; I just walked to the grocery store but got too much stuff and Bobby had to pick me up), and so far today I did a 35 minute video – Self: Slim and Sleek, Fast! Bobby has class all day so I’m on my own. We were going to go to a pumpkin festival but that will probably happen tomorrow instead.

Oddly enough, Meghann and Kath both posted about non-rest rest days yesterday! Their opinions were similar to mine. Remember to check out my workout page if you ever want to see what I’ve been doing. And don’t forget about my yoga page – it has lots of great (free) yoga resources. I should probably update it because I’ve found some more (free) sites.

Another post I enjoyed reading was Tina’s post this morning – she ate a pretty amazing looking muffin for breakfast. Muffins are actually one of my favorite foods, but I don’t really eat them that often. She reminded me that I should definitely treat myself occasionally! Back at Cornell, Bobby and I used to go to a cafe called Mate Factor and they had the most amazing muffins. This is their raspberry one (old picture). I’ve posted about Mate Factor HERE and HERE and HERE.

I’m off to shower and enjoy this lovely fall Saturday. What are your plans? What’s your favorite muffin?

On Sunday’s blogger meetup we went to a cozy little cafe called Bread & Cocoa on Sutter Street in San Francisco. How could I resist the $2.99 oatmeal?

It was a humongous bowl, so I went pretty easy on the toppings. I had raisins, almonds, and in-house granola. I also added a little bit of skim milk. I actually managed to finish all but 1 bite of this gigantic bowl of oats. I brought the bloggies some homemade tea bags…

For lunch we went to the Ferry Building to get our favorite – Delica rf-1. It’s a Japanese delicatessen with the most amazing salads. I got the 3-salad combo; Bobby got the 2-salad + a main item combo. Bobby got Wasabi Garlic Potato Salad (Garlic potato salad with wasabi mayonnaise, edamame, snap peas, and romaine hearts), Spicy Burdock Root Salad (A spicy mix of braised burdock and konnyaku (mountain potato) tossed with thin slices of white onion, celery, julienne carrots, and wild mizuna), and for the main item he got Tofu & Chicken Patty with Hijiki (Free-range chicken and organic tofu patty with hijiki seaweed and carrot; served in a sweet soy sauce).

I got the Spicy Burdock Root Salad, and a double serving of Hijiki and Soybean Salad (Hijiki (seaweed rich in calcium, iron, and fiber) mixed with dried soybeans, edamame, konnyaku (mountain potato), daikon, wild mizuna, fried tofu, and kuko (wolfberry)).

I think we go to Delica almost every time we head up to San Francisco. It is probably the best food I have ever eaten. I’m not kidding. It’s that good. We’re heading up to SF tomorrow so I’m sure we’ll be back.

What is your favorite restaurant, and where is it? What do you get?

I have 3 goals in mind for July:

Less kabocha!

More healthy fats!

Be spontaneous

I had a kind of last hurrah with kabocha last night and finished a whole one (and it was big). I think it’s time for moderation.

As for healthy fats… I do enjoy my nut butters and olive oil, but not enough. Maria posted about this yesterday, too. I have nut butter with breakfast and usually a little bit of olive oil with dinner and lunch – but it probably totals about 2 tablespoons altogether. So I’m going to go for it and start incorporating more fat.

Spontaneity is also something I want to improve on. This is just eating what I want when I want it, rather than waiting for the normal times that I eat and eating the same things.

Yesterday wasn’t a total bust in terms of goals though – I made a kickbutt Thai papaya salad based on my recipe here.

Ingredients – 1 shredded green papaya (50 cents on sale @ Vietnamese market), 1 shredded organic carrot, 2 chopped plum tomatoes (also on sale), 5-6 cloves of garlic.

Dressing – soy sauce, rice vinegar, lemon juice, worcestershire sauce, fish sauce, sugar (sweet simplicity), PB2, chili powder, chili flakes… (I might be forgetting something).

This is Bobby’s and my favorite salad, and we ate the whole thing while we were watching jeopardy and wheel (million dollar winner last night!). Yes, we are old and we love jeopardy and wheel. I probably had about 80% of the salad, but I was impressed at how much of it Bobby ate. He’s not as much of a veggie disposal as I am. The whole salad cost me about $1 to make because of this great Vietnamese store that has a cheapo rack. I got a green papaya ($0.50), a big bag of 4 chayotes and 4 tomatoes ($1.50), and 6 eggplants ($0.50). I think that’s all.

In the afternoon I made a lunch sort of thing with shrimp, konnyaku, chayote (on sale), olive oil, stir-fry sauce, and mustard (added later). I’m almost done with the shrimp. I’m liking chayote – it’s kind of bland, but it’s nice and crunchy and good with other flavors. I had a few other random snacks, so this wasn’t really a lunch. Yummy though. More like a snack to hold me until dinner.

Want to join me with any of the goals? What are your goals for July?

Before I forget, Justine is having a really cool giveaway, so I’m going to do a confession of the day to get an extra entry – I hate clutter, but I have a terrible time getting rid of things. I try to make Bobby give away all those ratty t-shirts that he never wears, but I always want to keep mine. I hate the clutter but I’m scared that as soon as I give something away I’ll need it!

One more thing – my friend just launched this cool recipe search engine, NomFinder. Check it out and let me know what you think. I’ll pass on suggestions to him.

I bought fresh burdock the other day because it has some amazing healthful qualities. I’ve made kinpira gobo before (burdock and carrot dish; Japanese) but I wanted to do something with the burdock alone. I basically followed the kinpira recipe, but omitted the carrots and cut the burdock into discs. It was great – kind of like burdock chips!

Burdock (the root) is a staple in a macrobiotic diet. It’s a root veggie, but better for you than most root veggies (like white potatoes). Burdock is high in dietary fiber (6g in a 100g serving), calcium, potassium, and amino acids; it’s also low calorie. In traditional medicine, burdock is used as a diuretic, diaphoretic (sweat), and a blood purifier. The oil extract is even used to cure baldness and nourish your scalp. It can also be used topically as a cure for skin conditions (acne, eczema, etc…). My mom used to make burdock tea during pregnancy; I’m not sure what it was supposed to do, but she birthed 3 healthy (and huge) babies – so it certainly didn’t hurt.

I’ve been having a lot of fun in the kitchen making “pad thai” – I use various veggies and shirataki noodles. I have a recipe posted for Butternut Squash Pad Thai, and my current experiments are based off of that recipe. I don’t have measurements, but here are the ingredients… I saute the toppings and protein (fish usually), then add the noodles, kabocha, spices, and sauces. It takes less than 10 minutes.

Sunday’s “pad thai” (best one so far):

base: grey shirataki noodles (boiled and drained)

toppings: sauteed in sesame oil – a tomato, mushrooms, sliced leeks, and lotus root; steamed kabocha

spices: chili powder, garlic powder, Asian 5-spice powder

sauces: water, hoisin sauce, soy sauce, PB2 regular

on top post-pic – PARM

Saturday’s “pad thai” (with “dried anchovies” from the Korean market). It was way too salty. Are these actually anchovies or is this a mistranslation?:

base: clear/white shirataki noodles (boiled and drained)

toppings: sauteed in sesame oil – mushrooms, bean sprouts, little fishies; steamed kabocha

spices: cumin, chili powder, garlic powder, oregano

sauces: water, soy sauce, PB2 regular

on top post-pic – nutritional yeast, and then PARM because the I did not like the nooch

Friday’s “pad thai” (with octopus!!):

base: tofu shirataki noodles (boiled and drained; this was 6 servings @ 15 cals per serving; Bobby got about 1 of those servings – he’s not a fan of tofu shirataki and neither am I)

toppings: sauteed in sesame oil – carrot, mushrooms, sprouts, octopus; steamed kabocha

spices: cumin, garlic powder, oregano

sauces: water, soy sauce, PB2 regular

on top post-pic – PARM

What’s great about all of these is that I can have “the same” thing for dinner each night… but it’s totally different every time. Because I’m using shirataki noodles I have room for a starch on the side, and usually that starch is about 1.5+ pounds of steamed kabocha with parm. I think I’m overdosing though; Bobby says I need to eat something other than kabocha every night. Still haven’t turned orange, but I’ll keep watching out for it. I just love kabocha too much.

What is the food you cannot live without? For me – kabocha!

Don’t forget to enter the Pecan Pumpkin Butter Giveaway! You have until Wednesday (12/17/08) at 9pm PST to leave a comment.

Yesterday we went to two holiday parties – Bobby’s (for Microsoft) and mine! We went to mine first (they started at the same time), but things hadn’t picked up 1.5 hours into the party, so we decided to head over to Bobby’s. We were planning on going back to mine after Bobby’s was over, but we didn’t really have the energy when the time came. Here’s my outfit:

Bobby’s company rented out this huge building and had a themed event with lots of awesome multicultural food. At this point I’d just been snacking on veggies and guac (at mine) so we decided to eat. I got lots of veggie curry (mushrooms, potatoes, carrots, chickpeas) and this tropical fruit salad (pineapple, avocado (!), melons, mango, and some light creamy sauce). I went back for lots of plates.

I wasn’t really planning on having desserts because they were all really sugary, but that plan went out the window after I had my first bite of chocolate cherry brownie. I think I must have consumed at least a day’s worth of calories in desserts, but… it was worth it. I usually eat so well that I think it’s okay to splurge once in a while. I did wake up feeling sick and sweaty in the middle of the night, so I don’t think I’m going to overdose on sugar again in the near future. Or at least I hope I don’t.

Backing up a bit…

Bobby and I headed into the city (San Francisco) in the early afternoon and ate lunch at our favorite Japanese deli – Delica RF-1 in the Ferry Building. We got very similar meals. I got:

hijiki&soybean salad – description from site - Hijiki (seaweed rich in calcium, iron, and fiber) mixed with dried soybeans, edamame, konnyaku (mountain potato), daikon, wild mizuna, fried tofu, and kuko (wolfberry).

burdock and lotus root salad - A spicy mix of braised burdock and konnyaku (mountain potato) tossed with thin slices of white onion, celery, julienne carrots, and wild mizuna.

wasabi garlic potato salad (so good – I’m scared of potatoes and don’t usually order them but this was delicious, and not too too heavy) - Garlic potato salad with wasabi mayonnaise, edamame, snap peas, and romaine hearts.

Bobby got:

wasabi garlic potato salad

burdock and lotus root salad

sweet&spicy chicken - Marinated chicken, lightly fried, served with sweet & spicy sauce.

Later on Bobby got a bread bowl of tomato soup (vegetarian) and I had some of that as well. We got the bowl on the side so we could dip it instead. I also got this great diet black cherry soda (sweetened with Splenda; this is the first diet soda for me in almost 3 weeks!).

This morning I woke up feeling better after the massive desserts and headed down to the gym for an hour of walking on the treadmill. It was nice. I actually enjoy walking on a treadmill (but can’t stand running on one – too boring) and I watched this documentary about a con artist who called himself Christopher Rockefeller. He’s French. I think con artists are usually brilliant, even though they are insane.

Before heading back to Mountain View (by train) we picked up breakfast. I got the perfect oatmeal from Starbucks. It was good! I added a bunch of spices (nutmeg, chocolate, and vanilla) and enjoyed it a lot. I didn’t add the brown sugar that’s pictured. I also added some tea (Berryblossom White, my favorite flavour at Starbucks) to the oatmeal to make it creamier because I forgot to add milk while I was still in the shop!

Once back in Mountain View, we stopped at the farmers’ market (it’s held in the train station parking lot) and I got some loose green grapes for $1/pound. I took them home and made lunch – raspberry lowfat yogurt (a little more than a cup), a cup of grapes, and a thick HEEL slice (the best) of cinnamon sugar toast! I saw this on Hil’s blog the other day and I’ve been craving it ever since.

I’m hoping to do some yoga and maybe some more walking later today. And tonight we have plans to get Vietnamese food. I’m excited! Oh, and there were apples today and yesterday, but you guys can just assume that I’m always having apples because I eat them so often that I forget to take pics or even mention them Have a lovely Sunday!

I’m participating in Leng’s Salad Challenge – eat one salad a day for 2 weeks, starting yesterday (Sunday the 16th). So far I’m doing well! Yesterday I started out the day (in the early afternoon – we slept in) with a plate of delicious leftover salads and some fresh green tea:

crab and mango salad

hijiki seaweed, mushroom, and konnyaku salad

wasabi potato salad

fruit salad with lemon juice – apple

I snacked on more apples and persimmons throughout the day. Then we went to dinner:

seafood soup

papaya salad (seconds)

shrimp pad thai

volcano shrimp (seconds)

veggie brown fried rice

And of course after dinner I had more fruit salad – apple, persimmon, and lemon juice. I think I had another persimmon at some point. And I had 2-3 clementines.

Around midnight I had a carb attack and ended up eating about half a baguette dipped in whipped real butter. I don’t know what possessed me to do this, but it sure was delicious. The baguette was whole wheat and it was so soft and flavorful. Bobby was making ramen and I was bored and feeling munchy, which is how I started.

This morning we were up at 4am eastern time (which is 1am pacific time, which is where I am currently!). I didn’t eat anything til we were on the first plane, at which point I had a nice first breakfast/snack:

apple

apple cinnamon Zbar

On the second flight they had better food and I ate this:

total cereal (I actually had 2 of these because I saved mine from last week’s flight)

about 6 ounces of lowfat milk (I had some of Bobby’s)

a sliced banana

When we got home I tried to replicate Bobby’s mom’s hijiki/mushroom/konnyaku salad and I got pretty close. The recipe’s not quite ready yet; it needs tweaking. I’ll post it when I have it right. So this was my lunch spread:

hijiki/mushroom/konnyaku salad

2 crisps with smart balance

an apple with lemon juice

We’ve been napping for the last couple of hours in an attempt to return to normalcy – traveling is so exhausting! I think we’re going to head out and do some grocery shopping (I’ll update you on the Thanksgiving Challenge later tonight) and possibly use our meal out this week for dinner.

Yesterday was another great day in Miami. I am still on Pacific time and I don’t plan on switching (we go back tomorrow) so we slept in late. I woke up around 11:30 and lounged in bed for almost another hour after that. We went downstairs to make breakfast:

1 cup blueberry yogurt, 1.5 cups fiber one, 1/2 cup blueberries, 1/2 cup sliced strawberries

a sliced honeycrisp apple with lemon juice on the side

green tea

Throughout the afternoon I snacked on many grapes, as well as this plate of fruit (apple and persimmon; Bobby’s mom loves persimmon just as much as I do):

And Bobby and I shared this panna cotta before dinnertime. Christina (family friend; she took care of Bobby when he was young) made them for all of us. They were this amazing light recipe and this whole panna cotta had something like 185 calories (I think less actually). I got the recipe from her and I will make it soon.

I had more grapes (they were an appetizer) and a few terra chips (gah, my weakness!) before dinner. (Unpictured.) But here’s a picture of their dog, Coco:

And this was the amazing dinner spread:

This was my first dinner plate, and unfortunately I didn’t get pictures of my other plates:

lightly fried crab cake (finished it – so good) with a sauce that is hiding behind the salad (avocado, corn, onion, cilantro, I’m not sure what else)

piece of salmon with some yummy sweet glaze

crab and mango salad with caviar

wasabi potato salad with eggs, carrots, cucumber, and celery (SO good – this was inspired by a dish made at a restaurant in San Francisco called Delica that we love. It’s a Japanese deli and I actually went there last Friday when my dad was here.)

a lot of caesar salad with chickpeas (olive oil and vinegar dressing, plus s&p and parmesan cheese)

I ended up going back for seconds of all the salads – wasabi potato, caesar, and crab and mango salad. Actually 3rds and maybe 4ths on the crab and mango. It was amazing. And I had more of the dip for the crab cakes, but just plain.

Our friends from college came over for the party and it was so good to see them again. We saw them last night for the movie too. After dinner was over we all ate a bunch of grapes.

Then there was dessert – chocolate amazing cake and key lime pie. I just had a bite of each. The key lime pie was very sweet but the chocolate cake was dark and rich and so good. I also cut up some fruit for people to share. One of the women that came loved my trick of putting lemon juice on the apples to bring out the sweetness. So I ended up having another plate of persimmon and apple… Yum.

After that we headed over to our friends’ apartment again and hung out until almost 2am playing Partini and just laughing and chatting. Have you played this board game? It’s really fun.

When we got back we wanted more food, so we ate leftovers and other random things:

more crab and mango salad

potato wasabi salad

hijiki seaweed, mushroom, and konnyaku salad – this was amazing and I had more than pictured.

unpictured terra chips (gah, again!) – about 1 serving

I have to say this again – Bobby’s mom is such an amazing cook. She’s so creative and so thoughtful. Most of her dishes have a Japanese influence and I love it.

I woke up about an hour ago and I’ve been lounging in bed so far… Bobby’s still sleeping but I might wake him up soon. I think today we’re going to go check out the apartment complex that our friends live in because the place is having an open house to show the available apartments, and we just want to check it out. I’m not sure what else we’re doing.

What’s your favorite board game or card game? I really enjoyed playing Partini last night. It could definitely be my favorite Have a wonderful Sunday!

This morning my dad and I got up bright and early. We went for a run – I did 4.2 miles and he did 4.4 – it was a little less than 40 minutes. My dad’s a good runner and he can go a lot faster than I can but he paced me for a while and I was able to go faster than I usually do.

When we got back I did Buns and Thighs Yoga (my dad tried to join in but he kept falling over so he stopped…) and then I made breakfast. This was supposed to be 2 oatmeal-protein pancakes but it turned into a scrambled mess instead!

Oatmeal-protein mess:

1/3 cup oats

2 tablespoons wheat germ

3 egg whites

1/2 cup skim milk

splash of water

dash of salt

1/2 teaspoon baking powder

cinnamon

And I topped it with 1/2 cup unsweetened applesauce and 1/2 a banana. I also had an apple on the side.

We went to San Francisco today and ended up walking 7.8 miles in total. We got out of the train station and walked to the Ferry Building, where we had lunch. I got mine at Delica, a cute little Japanese deli. I got two salads; they were very filling. The soybean one had lots of beans and some fried tofu. I think both of them had a decent amount of oil in the dressing so the added fat definitely helped to hold me over as well.

Hijiki Soybean Salad – hijiki seaweed, dried soy beans, edamame, konnyaku, daikon, wild mizuna, fried tofu, and kuko (wolfberry). Vegetarian. This is so so good.

Spicy Burdock Root Salad – braised burdock, konnyaku, white onion, celery, carrots, and wild mizuna. Vegan. Delicious.

I also snagged a bite of my Dad’s (organic) beef chili as well as some fries. He ordered from this cool diner called Taylor’s. Both delicious.

After lunch we walked up to Fisherman’s Wharf… and then we thought that we weren’t very far from the Golden Gate Bridge, so we tried to walk to that as well. We ended up about 3.9 miles away from the train station (I just google mapped it)! We were tired, so we walked all the way back to the station to go home. On the way home we each had an apple (pink lady).

When we got back I was pretty famished so after I took a refreshing hot shower I set out a veggie plate with salsa and bbq sauce:

And then we decided to go to Blue Mango, the restaurant that Bobby and I went to with Brittany of Eating Bird Food the other week! We all shared 4 dishes:

prawn papaya salad (split evenly)

scallops, asparagus, shiitake mushroom, pepper, straw mushrooms, and onion stir-fry (I ate most of this)

crab fried rice (Dad loved this; I had a few bites)

pad thai (also delicious; I had a few bites)

When we got home I had… an apple! No surprise there. I also snacked on some veggies and salsa, as well as about 60-70 pistachios. I love the nutrition stats for pistachios – 47 kernels for only 158 calories. This kind is slightly spicy.

I’m not sure what we’re doing tomorrow yet, but I’m sure it’ll be a fun day. I like spending time with my dad We might head up to Napa, we’re definitely spending time in Palo Alto and seeing Stanford, and we’ll probably walk some more.

Happy Weekend!
