Bobby’s cousins are so sweet. I’m going to miss them a lot. On our last night in California (Monday, November 9th) we went out together to Blue Mango (our favorite restaurant) in Santa Clara. Blue Mango is a Thai restaurant and they have a separate vegetarian menu (I haven’t used it in a while). We shared a bunch of dishes…

Appetizer: Heavenly Stuffed Wings – de-boned chicken wings stuffed with ground chicken, silver noodle, cilantro, water chestnut and black mushroom. They came with this great sweet dipping sauce. This was kind of scary at first (fried! processed! breaded!) but the deliciousness made up for it.

For dinner we shared 4 dishes. The Blue Mango Fried Rice – a big house special: chicken fried rice topped with sweet garlic pork.

The Green Curry – eggplant, bamboo, and bell pepper are soaked in coconut milk, with a hint of basil (cannot be mild).

Mushroom Mountain, as usual – soft tofu, baby corn, bamboo, straw mushroom, and bean sprout stir-fried with a bit of green curry paste. Sesame seed are sprinkled on for a beautiful finish.

And Basil Chili Chicken, also as usual – with bell pepper and onion.

After dinner we went out for dessert (frozen yogurt) at Golden Spoon – pumpkin pie and chocolate flavors. The toppings were raspberries, mango (not ripe, unfortunately), and crushed brownie bits.

Blue Mango never disappoints. And neither does Golden Spoon. If you ever get a chance, go there! (I’m talking about the Blue Mango on Stevens Creek – I hear the other one is not so good.)

Now that I’m in NJ I don’t have Blue Mango. But I do have Edo Sushi! Bobby, Julia, and I all went out for dinner tonight. I love this place. Edo Sushi is a Japanese and Chinese restaurant on Route 31 in the same shopping center as Pennington Market. It’s about a 10 minute walk from my parents’ house.

First is the tea… (unlimited and free – my two favorite qualities). Notice my cool NY key chain – it’s kind of vintage because it has the twin towers on it. I think I got it back in middle school.

I got chicken and broccoli with the sauce on the side (brown sauce).

The other pictures didn’t come out, but Julia got veggies and tofu with the sauce on the side (also brown sauce). Bobby got the Dragon vs. Phoenix – chicken, shrimp, and veggies stir-fried with yet another brown sauce. He also got a big pot of rice.

We finished everything. The check came with pineapple cubes and fortune cookies. Yum! I love Edo’s.

This dinner was nice after my indulgent afternoon… My parents gave me a massage + facial combo for my birthday and I finally used it. I went to Sydney Albert Salon Spa in Princeton. I’d highly recommend this place – I’ve been going there for years and I’ve always loved everything. Their haircuts are amazing, the facials are fantastic, and the massage was wonderful. Bobby also got a massage and he loved it.

While we were getting pampered, our Relocube arrived. Now we have to unpack it. I’m going into the city tomorrow, but when I get home I think we’re going to try to start sorting through all of our stuff. It’ll be a big project.

What’s your favorite restaurant?

We ordered 4 things to share. We got the mushroom mountain (no picture, but there are pics in just about every other post about Blue Mango!) – ”soft tofu, baby corn, bamboo, straw mushroom and bean sprout stir-fried with a bit of green curry paste, sesame seed are sprinkled on for a beautiful finish”. We also got Basil Chili Chicken (spiciness 7/10). Wonderful, as usual.

And a new dish – green curry (spiciness 5/10). This had prawns, eggplant, bamboo, red peppers, and maybe some other things. So creamy and satisfying. This is my new favorite. Bobby can’t decide between this and the mushroom mountain.

We also got crab fried rice, which we usually get. This was both of our cousins’ favorite.

After dinner we headed next door to Golden Spoon. Golden Spoon is one of the many California frozen yogurt shops, but it ranks among the best. The yogurt is creamy, ice-free, and basically a party in your mouth.

Bobby and I got the Pumpkin Pie (!) flavor and the classic vanilla. No toppings. I also tried Peanut Butter Cup, Cake Batter, and Raspberry. All delicious. The yogurt has about 25 calories in an ounce, and this size is supposed to be about 10 ounces. It was the perfect amount for two to share.

Today I think we are headed to the Japantown Farmers’ Market (maybe with friends) and I want to get a facial.

What was the last thing you did to pamper yourself?

I made this yesterday for lunch. My lovely sister sent me a spiralizer for my birthday and I had been dying to find a good recipe for it. I made zucchini noodles a few days ago, but once I was done I wasn’t in the mood for zucchini. I put them in the fridge and almost forgot about them until lunchtime yesterday. You definitely don’t have to use spiralized summer squash though; you could just chop it up, or use a different vegetable altogether.

I based this off of a stir-fry that we had on Monday night when our friends Ryan and Janet came over. I’ll share pics of that at the end. The ingredients list looks long, but I promise it’s simple. Read the instructions and you can substitute any veggies/proteins that you want!

Simple Thai Stir-fry with Spiralized Summer Squash

Ingredients (serves 1 Maggie as a meal; 2-4 as a side)

2 teaspoons olive oil

4 cloves of garlic, crushed or grated

protein: a few slices of chopped tofurkey, or some tofu, or other protein (chicken, lunchmeat, shrimp)

veggies: 1/2 medium white onion = <1/2 cup total; 2 medium stalks of celery, sliced = <1 cup total; 5 Brussels sprouts, cut in quarters

1-2 tablespoons fish sauce (optional for vegans/vegetarians)

2-3 tablespoons pineapple juice (other fruit juice would work too)

1 tablespoon sweetener (I used about 2 teaspoons Trader Joe’s stevia)

spices: dash of red pepper flakes (1/4 teaspoons), a few sprinkles of fresh ground pepper

1 large summer squash = 2+ cups of spiralized summer squash noodles (or use real noodles/pasta! I’d toss in some cooked vermicelli)

Directions

Heat the oil in a wok on high heat. Add the garlic, tofurkey, onion, celery, and Brussels sprouts. If you are using meat, you may want to add the meat by itself at first, before adding the rest of the veggies.

Add the stevia, spices, pineapple juice, and fish sauce (if using). Saute for about 4-5 minutes.

Add the zucchini. Continue to saute for another 2-3 minutes.

Serve hot, plain or with rice.

I enjoyed this with a nice cup of organic Throat Comfort Yogi tea. “Live from your heart, you will be most effective.”

When we had this with Ryan and Janet, Ryan made it and he used chicken for the protein, and sugar in the raw for the sweetener.

The veggies were: celery, scallions, yellow pepper, and green chilis (no Brussels or zucchini), and also cashews.

Bobby, Ryan, and Janet all had theirs with rice; I had mine with spaghetti squash. This is my first plate.

Ryan has a Nikon D40 (the SLR I might want – I’m also looking at the D3000) and he let me play with it when they came over. I really really want it. I’m not sure if I can justify spending almost $500 (or more on the D3000) on a new camera, when it’s my fault that I broke my old one, and I don’t have a full-time job. One reader reminded me that I can call it a tax write-off, which is making me lean towards getting it.

What was the last thing you splurged on?

On Friday night we got dinner at Blue Mango, our favorite restaurant (Thai).

Egg fried rice (Bobby’s):

Bamboo stirfry (split – with pork, cashew, baby corn, straw mushroom, onions, and tomatoes):

Mushroom mountain plus chicken (split – chicken, soft tofu, baby corn, bamboo, straw mushroom, bean sprouts, green curry paste, sesame seeds):

And for dessert we went to Quickly for frozen yogurt. We got a 13-ounce (large) with unlimited toppings (until you fill the cup) for $3.50. Quickly rocks.

This was plain tart frozen yogurt, carob chips, blueberries, and aloe. I ended up eating most of it. I loved the aloe. The carob chips were okay.

Couldn’t sleep at all last night… so maybe going back to bed. Hope you had a great weekend

Thank you so so much for the amazing response to yesterday’s announcement. I am overwhelmed. Details – not sure when or where. Depends on where we’re living in a few months! Honeymoon – Hawaii, Caribbean cruise, the Bahamas… somewhere warm. The food – lots of awesome Japanese and Asian stuff, macrobiotic dishes, and crazy cool Maggie food. I don’t think I could have a wedding without kabocha. I will definitely be updating as I figure out more.

Last night we decided to go out to celebrate. Of course we went to our favorite Thai restaurant, Blue Mango. This is the only restaurant I ever go to anymore – I know that their food is awesome and they have tons of options. We went all out and got three dishes to share. First up, the Combo Fried Rice – with prawn, chicken, pork, tomato, onion and egg. I had a little bit of this; Bobby had most of it.

Next was the Bamboo stir-fry (vegan unless you get it with chicken) – with cashew, baby corn, straw mushroom and onion. We got it with chicken. We pretty much split this exactly.

And lastly, the Mushroom Mountain stir-fry (vegan) – soft tofu, baby corn, bamboo, straw mushroom and bean sprout stir-fried with a bit of green curry paste. Sesame seed are sprinkled on for a beautiful finish. I had most of this and Bobby had a little bit. I wish they’d put more sesame seeds.

We just about cleaned all the plates (brought home a few pieces of chicken that I stuck in Bobby’s lunch today).

I decided to practice being wifey and make Bobby a bento lunch. I did Soba Noodles with Umeboshi Dressing (macrobiotic), topped with sauteed onions, a hot dog, and leftover chicken. I sliced up a peach as well, and there’s an unpictured hotdog bun (with smart balance). He also has an arsenal of snacks like milk chocolate, crackers, and sembe (Japanese cracker things). The cutest part though is the 2 carrot hearts that I made and put on top of the noodles. Very bento-ey

Here’s another thing I’ve been putting in Bobby’s lunches that he loves… Ants on a log! You all had this when you were little, right? Celery + peanut butter (PB&Co’s Mighty Maple here) + raisins = ants on a log. We had a long and rather inappropriate discussion about names that would be better than “ants on a log”, but I’ll spare you the details (which mostly revolved around “poo”).

I’m off to do some yoga. Though I can’t seem to stop staring at my ring finger when I’m in downward dog and doing chaturangas. I might get a strange crick in my neck if I keep this up! Speaking of yoga, I have done about 40 minutes a day for the last week… and that’s about it, for exercise. I haven’t even been walking much. But I feel great. Here’s my exercise log.

Today’s question: what’s your favorite childhood food? I think mine would have to be the breakfasts that my dad made on the weekends. Pancakes, waffles, and French toast. Pancakes were every Saturday and Sundays alternated between waffles and French toast.

I was helping make fried rice last night (for Bobby) and I decided to have some for myself too.

It was so good! There’s more rice underneath the meat and veggies; I just like stealing extra toppings. I’m going to have fried rice more often. This might be the only way that I enjoy rice. Just as a comparison, here are Bobby’s dinner (left) and my dinner (right):

He had a huge bowl of rice, a small bowl of salad, and went back for more rice. I had a huge bowl of salad, a small bowl of rice, and went back for more salad. The salad (Thai papaya salad) was the same one I posted yesterday but with added shrimp and no carrot (no extra beta-carotene).

This dinner definitely counts as spontaneous (one of my July goals).

Today’s question is: What’s your favorite healthy fat? Mine is hands down peanut butter (all natural, plain, freshly ground is best). I like it more than any other nut butter, more than oils, more than avocadoes, more than olives…

I have 3 goals in mind for July:

Less kabocha!

More healthy fats!

Be spontaneous

I had a kind of last hurrah with kabocha last night and finished a whole one (and it was big). I think it’s time for moderation.

As for healthy fats… I do enjoy my nut butters and olive oil, but not enough. Maria posted about this yesterday, too. I have nut butter with breakfast and usually a little bit of olive oil with dinner and lunch – but it probably totals about 2 tablespoons altogether. So I’m going to go for it and start incorporating more fat.

Spontaneity is also something I want to improve on. This is just eating what I want when I want it, rather than waiting for the normal times that I eat and eating the same things.

Yesterday wasn’t a total bust in terms of goals though – I made a kickbutt Thai papaya salad based on my recipe here.

Ingredients – 1 shredded green papaya (50 cents on sale @ Vietnamese market), 1 shredded organic carrot, 2 chopped plum tomatoes (also on sale), 5-6 cloves of garlic.

Dressing – soy sauce, rice vinegar, lemon juice, worcestershire sauce, fish sauce, sugar (sweet simplicity), PB2, chili powder, chili flakes… (I might be forgetting something).

This is Bobby’s and my favorite salad, and we ate the whole thing while we were watching jeopardy and wheel (million dollar winner last night!). Yes, we are old and we love jeopardy and wheel. I probably had about 80% of the salad, but I was impressed at how much of it Bobby ate. He’s not as much of a veggie disposal as I am. The whole salad cost me about $1 to make because of this great Vietnamese store that has a cheapo rack. I got a green papaya ($0.50), a big bag of 4 chayotes and 4 tomatoes ($1.50), and 6 eggplants ($0.50). I think that’s all.

In the afternoon I made a lunch sort of thing with shrimp, konnyaku, chayote (on sale), olive oil, stir-fry sauce, and mustard (added later). I’m almost done with the shrimp. I’m liking chayote – it’s kind of bland, but it’s nice and crunchy and good with other flavors. I had a few other random snacks, so this wasn’t really a lunch. Yummy though. More like a snack to hold me until dinner.

Want to join me with any of the goals? What are your goals for July?

Before I forget, Justine is having a really cool giveaway, so I’m going to do a confession of the day to get an extra entry – I hate clutter, but I have a terrible time getting rid of things. I try to make Bobby give away all those ratty t-shirts that he never wears, but I always want to keep mine. I hate the clutter but I’m scared that as soon as I give something away I’ll need it!

One more thing – my friend just launched this cool recipe search engine, NomFinder. Check it out and let me know what you think. I’ll pass on suggestions to him.

Last night my mom treated us to dinner at one of our favorite Thai places: Blue Mango in Santa Clara, CA. We go there all the time, and we always get the same exact thing. So of course tonight was no exception.

We all started with this Prawn Papaya Salad to share – so delicious. “This typical Eastern Thai dish consists of fresh green papaya strips and Tiger prawn lightly beaten with tomato, lime, green bean, carrot and cashew for a nice tangy flavor.” We’ve learned to get everything mild here, because no matter how much you stress that you want something “medium” spicy, it always comes out firey.

My mom decided to break us out of our rut and she got this crazy Volcano Chicken dish. “Quarter chicken marinated in honey, ginger, and kaffir leaves with snow pea, pineapple, tomato and straw mushroom. Served sizzling like a volcano!” It was sweet and savory and so good.

Bobby got the Basil Chili Chicken (mild), as usual. This comes with bell pepper and onion as the vegetables.

I got Mushroom Mountain again. “Soft tofu, baby corn, bamboo, straw mushroom and bean sprout stir-fried with a bit of green curry paste. Sesame seed are sprinkled on for a beautiful finish.” I seriously cannot get enough of this dish. (It’s vegan by the way.)

We finished everything except for a little bit of the Volcano Chicken, which I stuck in Bobby’s lunch today (on a sandwich). This was a pretty late meal for my mom – they usually eat around 5:30-6 EST, and we didn’t eat until almost 9 PST last night. I’m glad she’s okay with our nutty schedule.

Today is my mom’s last day (she flies out tomorrow morning) so we’re just going to stay around home and do some shopping and enjoy our time. Yesterday I was teaching SAT prep (math) all day so we didn’t get to do much. That went well, by the way. I had a lot of fun with my kids. I taught a class in the morning and then the same material to different kids in the afternoon. I’m really glad it worked out.

Happy Monday!

I bought fresh burdock the other day because it has some amazing healthful qualities. I’ve made kinpira gobo before (burdock and carrot dish; Japanese) but I wanted to do something with the burdock alone. I basically followed the kinpira recipe, but omitted the carrots and cut the burdock into discs. It was great – kind of like burdock chips!

Burdock (the root) is a staple in a macrobiotic diet. It’s a root veggie, but better for you than most root veggies (like white potatoes). Burdock is high in dietary fiber (6g in a 100g serving), calcium, potassium, and amino acids; it’s also low calorie. In traditional medicine, burdock is used as a diuretic, diaphoretic (sweat), and a blood purifier. The oil extract is even used to cure baldness and nourish your scalp. It can also be used topically as a cure for skin conditions (acne, eczema, etc…). My mom used to make burdock tea during pregnancy; I’m not sure what it was supposed to do, but she birthed 3 healthy (and huge) babies – so it certainly didn’t hurt.

I’ve been having a lot of fun in the kitchen making “pad thai” – I use various veggies and shirataki noodles. I have a recipe posted for Butternut Squash Pad Thai, and my current experiments are based off of that recipe. I don’t have measurements, but here are the ingredients… I saute the toppings and protein (fish usually), then add the noodles, kabocha, spices, and sauces. It takes less than 10 minutes.

Sunday’s “pad thai” (best one so far):

base: grey shirataki noodles (boiled and drained)

toppings: sauteed in sesame oil – a tomato, mushrooms, sliced leeks, and lotus root; steamed kabocha

spices: chili powder, garlic powder, Asian 5-spice powder

sauces: water, hoisin sauce, soy sauce, PB2 regular

on top post-pic – PARM

Saturday’s “pad thai” (with “dried anchovies” from the Korean market). It was way too salty. Are these actually anchovies or is this a mistranslation?:

base: clear/white shirataki noodles (boiled and drained)

toppings: sauteed in sesame oil – mushrooms, bean sprouts, little fishies; steamed kabocha

spices: cumin, chili powder, garlic powder, oregano

sauces: water, soy sauce, PB2 regular

on top post-pic – nutritional yeast, and then PARM because the I did not like the nooch

Friday’s “pad thai” (with octopus!!):

base: tofu shirataki noodles (boiled and drained; this was 6 servings @ 15 cals per serving; Bobby got about 1 of those servings – he’s not a fan of tofu shirataki and neither am I)

toppings: sauteed in sesame oil – carrot, mushrooms, sprouts, octopus; steamed kabocha

spices: cumin, garlic powder, oregano

sauces: water, soy sauce, PB2 regular

on top post-pic – PARM

What’s great about all of these is that I can have “the same” thing for dinner each night… but it’s totally different every time. Because I’m using shirataki noodles I have room for a starch on the side, and usually that starch is about 1.5+ pounds of steamed kabocha with parm. I think I’m overdosing though; Bobby says I need to eat something other than kabocha every night. Still haven’t turned orange, but I’ll keep watching out for it. I just love kabocha too much.

What is the food you cannot live without? For me – kabocha!

For all of my FAQ posts, check out my FAQ page.

4. Carolinebee says, “I would love to hear your educational/career history.”

I went into college undecided. I didn’t really know what I wanted to do, or what I enjoyed. I took some econ classes because that was what my dad majored in and I had worked for him my whole life (financial and pension stuff). I also took math classes because they were fun and I was good at it. I realized that I could double major and graduate early, and being the competitive/crazy/type-A person that I am, I went for it. I liked my math and econ classes, but I loved so many other classes too (Italian, Linguistics, Oceanography, Business, etc…).

I graduated in December ’07 with degrees in Math and Econ. (I’m class of ’08.) I had an internship before my senior year (2007) at JPMorgan as a summer associate; I worked on the mortgage backed securities trading desk. Hours were 6am – 7pm. I lived in Greenwich village in a teeny studio apartment that I shared with my friend from Cornell who also was working at JPMorgan. I got the job offer but turned it down; it was a bad time to enter that field (my friends who accepted got laid off a little while ago).

When I graduated, I got a job at the Federal Reserve Bank of San Francisco. I worked there from February ’08 – May ’08. I was a research associate. I worked for a senior international economist. Lots of statistics and programming. There were parts of the job I liked, but overall I felt like our department didn’t get much done. I didn’t like it enough to stick with the hour-long commute (1 hour each way), so I decided to find a job closer to Bobby’s job.

I fond a job as a software engineer at a local (Mountain View, CA) internet startup. This job started out pretty fun. Unfortunately, my boss quit, and after that the company started to go downhill. Many other senior people quit, we had people running things that didn’t know what they were doing, and the company ended up doing a major downsize back in January ’09. They laid off 70% of the company in one day.

Now…

5. Jen asks, “What job(s) are you working right now, and what are your career plans for the future?”

I blog and I do private tutoring; I also get a few students from a local tutoring company. I tutored for the SAT as well as math and english. I have also tutored online, which was kinda cool.

I was doing a little bit of webdesign consulting work, but that’s mostly ended now.

I’ve also taken two YogaFit trainings, which starts me on the path to being a RYT (registered yoga teacher – 200 hours of training). I haven’t started teaching yet, but I do plan on pursuing this more in the near future. This isn’t my main focus, but it’s a lovely hobby

For the future – I would love to find a job that incorporates what I’ve learned from blogging with education or another hobby of mine (yoga, health, cooking, music).

6. Clare asks, “For a person who is terrified of raw fish, what would be the “safest” sashimi for that person to try first?”

I had to consult with Bobby on this one. We decided that both tuna and salmon are probably the mildest fish to start with. Another way to start would be to get smoked salmon, which isn’t truly raw. Unagi (eel), my favorite sushi, is not raw either. After you tackle tuna and salmon, move onto crazier things!

7. Sophia asks, “what is your favorite cuisine?”

This is so hard! I would have to say that in general, I love ALL Asian food… but my favorite is definitely Vietnamese (without MSG), or Thai. My favorite dish of all time is papaya salad (especially with shrimp) and both of these cuisines have amazing versions of it. I love Vietnamese food because it’s always light and healthy and I leave the table feeling energized. Thai food is a bit heavier, but it’s amazingly savory and they have the best stir-frys ever. I can’t decide! Other favorites – Korean (bi bim bap), Japanese (sukiyaki), and real Chinese food. Not Chinese take out. I lived with 3 Chinese roommates when I first moved to Cali and they fed me some amazing dishes. The Bay Area has so many great Asian restaurants and I’ve even tried Malaysian food (they have papaya salad too).

You’re probably sick of listening to me go on, so I’ll save some more for later. Keep them coming I love answering your questions. Happy Monday!
