A few of my favorite bloggers have recently committed to getting back on track. Caitlin declared the whole month of November as a time to get back on track; Angela is doing it for the first week of November, starting today (the 2nd). I’m feeling it too: I haven’t been doing that much yoga, I haven’t been walking as much as I like to, and, to be perfectly honest, I’ve been eating a lot of crap. I haven’t been practicing mindfulness either, and I find myself munching through the day instead of eating proper meals.

This challenge might be hard for a few reasons – 1) Bobby and I are driving across the country next week; 2) the holidays and lots of decadent foods are coming up; 3) due to the move, I don’t know what my new routine will be (we’re moving to Manhattan btw). But I’m going to try. I’m synthesizing their goals and mine, and this is what I came up with. I’m going to try to do this for as long as I can. These aren’t arbitrary; these goals are what my ideal lifestyle would be so I want to keep up with them.

Go to bed early (by 11:30pm) and get 7-8 hours of sleep a night.

Cut out artificial sweeteners. I’ve been on a diet coke kick recently and it’s time to stop.

More veggies, less fruit.

More cooked foods, fewer raw.

Lots of water and tea.

Cook and plan more (or at least eat out at cheap-yet-healthy places).

Sit down for every meal.

Do something relaxing for 30 minutes every day (yoga, a bath, these exercises).

30+ minutes of cardio each day (walking, running, yoga).

Give myself credit. Even if I don’t do all of these things perfectly, I’m going to give myself credit for the attempts and partial successes.

Because we’re moving, I’m trying to use up the groceries we have and I don’t plan on buying more. This week I’ll be eating out a lot but I’m not too worried about that; I love eating out and I can always find something healthy on the menu. The only thing that worries me about eating out is the money issue. I wish I was less frugal

The other issue I might have is that this weekend is the Foodbuzz Blogger Festival. I plan on eating well, but I doubt that I’m going to get much sleep because two of my favorite bloggers are coming to stay with me and we’re all going together. I am so excited to meet them.

Some of the yummy dishes I plan on making and eating during this November challenge are…

a healthy Thanksgiving meal, like last year’s

fresh delicious salads

lots of squash fries…

this fun Indian mushroom recipe

… and lots more. You should check out my recipes page for more inspiration. This bread recipe was one of the first things I ever posted (December 2007).

Anyway, back to the “back on track” plan. Today has been a good day so far. I did a yoga class this morning at my studio and I went to bed early last night (crashed on the couch at 9:30pm). I wanted to go to Sweet Tomatoes for dinner, but Bobby has band practice… so maybe not.

And now this post is getting epic. Happy November! Are you challenging yourself this month?

Right now I’m watching Food, Inc. with my dad. I’m really glad he’s watching it… I’ll let you know what he thinks.

Quick summary of our day: This morning my midterm went fine; I think my bowl of protein powder oats gave me some good brain power. We didn’t really do anything else terribly exciting today because I had to show our apartment at 1pm. We got Chipotle for lunch (Dad’s first time) – I got a veggie salad, Dad got a chicken bowl, and Bobby got a chicken burrito. After the showing we headed to Santana Row, an upscale shopping area in San Jose.

Sorry in advance for the crappy pictures – left my sweet camera at home and used the small one.

Tonight we went out for dinner with out cousins. We got Vietnamese at Pho Nam in Sunnyvale. This place is great. I got #52, the Vermicelli with Shrimp. It came with veggies (lettuce, cilantro, carrots, cucumber), vermicelli (rice noodles), grilled shrimp (with oil), and a yummy fish sauce topping. We got (unpictured) spring rolls (fried and fresh) for the table as well.

I thought this meal was fab – fresh, light, and pretty healthy. Dad got pork and shrimp vermicelli (similar to mine) and Bobby got beef pho (noodle soup). Bobby also got a strawberry shake – I thought it was pretty so I snapped a picture (and had some of course).

Dessert was lots of fresh pineapple from Safeway (Thanks, Dad!).

Just a reminder – I don’t post about everything I eat; don’t think this was everything I ate today

I have been eating this awesome smoked mozzarella cheese on apples. I’ll try to remember to take a picture next time I have it. And I still have to share that crazy chocolate treat that I got recently too.

Have you had any cool new food finds lately?

I have 3 goals in mind for July:

Less kabocha!

More healthy fats!

Be spontaneous

I had a kind of last hurrah with kabocha last night and finished a whole one (and it was big). I think it’s time for moderation.

As for healthy fats… I do enjoy my nut butters and olive oil, but not enough. Maria posted about this yesterday, too. I have nut butter with breakfast and usually a little bit of olive oil with dinner and lunch – but it probably totals about 2 tablespoons altogether. So I’m going to go for it and start incorporating more fat.

Spontaneity is also something I want to improve on. This is just eating what I want when I want it, rather than waiting for the normal times that I eat and eating the same things.

Yesterday wasn’t a total bust in terms of goals though – I made a kickbutt Thai papaya salad based on my recipe here.

Ingredients – 1 shredded green papaya (50 cents on sale @ Vietnamese market), 1 shredded organic carrot, 2 chopped plum tomatoes (also on sale), 5-6 cloves of garlic.

Dressing – soy sauce, rice vinegar, lemon juice, worcestershire sauce, fish sauce, sugar (sweet simplicity), PB2, chili powder, chili flakes… (I might be forgetting something).

This is Bobby’s and my favorite salad, and we ate the whole thing while we were watching jeopardy and wheel (million dollar winner last night!). Yes, we are old and we love jeopardy and wheel. I probably had about 80% of the salad, but I was impressed at how much of it Bobby ate. He’s not as much of a veggie disposal as I am. The whole salad cost me about $1 to make because of this great Vietnamese store that has a cheapo rack. I got a green papaya ($0.50), a big bag of 4 chayotes and 4 tomatoes ($1.50), and 6 eggplants ($0.50). I think that’s all.

In the afternoon I made a lunch sort of thing with shrimp, konnyaku, chayote (on sale), olive oil, stir-fry sauce, and mustard (added later). I’m almost done with the shrimp. I’m liking chayote – it’s kind of bland, but it’s nice and crunchy and good with other flavors. I had a few other random snacks, so this wasn’t really a lunch. Yummy though. More like a snack to hold me until dinner.

Want to join me with any of the goals? What are your goals for July?

Before I forget, Justine is having a really cool giveaway, so I’m going to do a confession of the day to get an extra entry – I hate clutter, but I have a terrible time getting rid of things. I try to make Bobby give away all those ratty t-shirts that he never wears, but I always want to keep mine. I hate the clutter but I’m scared that as soon as I give something away I’ll need it!

One more thing – my friend just launched this cool recipe search engine, NomFinder. Check it out and let me know what you think. I’ll pass on suggestions to him.

For all of my FAQ posts, check out my FAQ page.

4. Carolinebee says, “I would love to hear your educational/career history.”

I went into college undecided. I didn’t really know what I wanted to do, or what I enjoyed. I took some econ classes because that was what my dad majored in and I had worked for him my whole life (financial and pension stuff). I also took math classes because they were fun and I was good at it. I realized that I could double major and graduate early, and being the competitive/crazy/type-A person that I am, I went for it. I liked my math and econ classes, but I loved so many other classes too (Italian, Linguistics, Oceanography, Business, etc…).

I graduated in December ’07 with degrees in Math and Econ. (I’m class of ’08.) I had an internship before my senior year (2007) at JPMorgan as a summer associate; I worked on the mortgage backed securities trading desk. Hours were 6am – 7pm. I lived in Greenwich village in a teeny studio apartment that I shared with my friend from Cornell who also was working at JPMorgan. I got the job offer but turned it down; it was a bad time to enter that field (my friends who accepted got laid off a little while ago).

When I graduated, I got a job at the Federal Reserve Bank of San Francisco. I worked there from February ’08 – May ’08. I was a research associate. I worked for a senior international economist. Lots of statistics and programming. There were parts of the job I liked, but overall I felt like our department didn’t get much done. I didn’t like it enough to stick with the hour-long commute (1 hour each way), so I decided to find a job closer to Bobby’s job.

I fond a job as a software engineer at a local (Mountain View, CA) internet startup. This job started out pretty fun. Unfortunately, my boss quit, and after that the company started to go downhill. Many other senior people quit, we had people running things that didn’t know what they were doing, and the company ended up doing a major downsize back in January ’09. They laid off 70% of the company in one day.

Now…

5. Jen asks, “What job(s) are you working right now, and what are your career plans for the future?”

I blog and I do private tutoring; I also get a few students from a local tutoring company. I tutored for the SAT as well as math and english. I have also tutored online, which was kinda cool.

I was doing a little bit of webdesign consulting work, but that’s mostly ended now.

I’ve also taken two YogaFit trainings, which starts me on the path to being a RYT (registered yoga teacher – 200 hours of training). I haven’t started teaching yet, but I do plan on pursuing this more in the near future. This isn’t my main focus, but it’s a lovely hobby

For the future – I would love to find a job that incorporates what I’ve learned from blogging with education or another hobby of mine (yoga, health, cooking, music).

6. Clare asks, “For a person who is terrified of raw fish, what would be the “safest” sashimi for that person to try first?”

I had to consult with Bobby on this one. We decided that both tuna and salmon are probably the mildest fish to start with. Another way to start would be to get smoked salmon, which isn’t truly raw. Unagi (eel), my favorite sushi, is not raw either. After you tackle tuna and salmon, move onto crazier things!

7. Sophia asks, “what is your favorite cuisine?”

This is so hard! I would have to say that in general, I love ALL Asian food… but my favorite is definitely Vietnamese (without MSG), or Thai. My favorite dish of all time is papaya salad (especially with shrimp) and both of these cuisines have amazing versions of it. I love Vietnamese food because it’s always light and healthy and I leave the table feeling energized. Thai food is a bit heavier, but it’s amazingly savory and they have the best stir-frys ever. I can’t decide! Other favorites – Korean (bi bim bap), Japanese (sukiyaki), and real Chinese food. Not Chinese take out. I lived with 3 Chinese roommates when I first moved to Cali and they fed me some amazing dishes. The Bay Area has so many great Asian restaurants and I’ve even tried Malaysian food (they have papaya salad too).

You’re probably sick of listening to me go on, so I’ll save some more for later. Keep them coming I love answering your questions. Happy Monday!

Last night I made a completely new dish – I had never cooked with squid before! A few weeks ago I picked up some frozen boiled squid at my local Japanese market and I’ve been trying to find a way to use it. I came up with this… (I’m pretty sure it’s a Vietnamese dish.)

Sauteed squid, leeks, and tomatoes

Ingredients (serves 2)

squid (I used 200 g, frozen, already cooked – but you could use fresh as well)

2 tablespoons fish sauce

<1 tablespoon sesame oil (for sauteing)

1 large leek, sliced

1 medium/large firm tomato, chopped

1/2 teaspoon pepper & 1/2 teaspoon Asian 5-spice powder (optional)

2 teaspoons cornstarch mixed with 1 tablespoon water

Directions

Marinate the squid in 1 tablespoon of fish sauce.

Heat the oil in a large saute pan/wok over high heat. Add the squid; saute for 1-2 minutes. Add the leeks and tomatoes and spices; saute for another 2-3 minutes.

Add the cornstarch mixture, stir, reduce heat to medium low and continue to cook for another 2 minutes. Add the last tablespoon of fish sauce; stir; serve!

I served mine over steamed kabocha (what else?) and Bobby had his over white rice. We split the dish exactly in two and it was perfect.

Squid is a great option – it’s high in protein and low in fat. It can lower cholesterol and it’s a good source of Phosphorus, riboflavin, and vitamin B12. The cooked tomatoes are a great way to get antioxidants (cooking them actually increases the lycopene content) and more of our vitamins (C, A, potassium, and even iron – very important). Leeks of course are high in fiber but also have a good variety of vitamins (folic acid, calcium, potassium, and vitamin C). They’re easier on the digestive system than regular onions, and they even have antiseptic and anti-arthritic properties.

How’s that for a nutritious meal? I hope you enjoy it What’s your favorite seafood (if you eat it)? Mine is shrimp. A definite yum.

Even though I post a menu plan almost every week, it’s rare that I stick to it. Menu planning can be frustrating. How am I supposed to know on Sunday what I’ll be craving in 5 days? Recently I’ve been listing different dinner options instead of placing them on exact days, but I’m still finding it difficult to follow.

Another thing that makes a plan hard to follow is that Bobby and I are rarely in the mood for the same thing. Tonight we lucked out – both of us were craving pho, so we went for it. But take this morning for instance -

That’s a bowl of green oat bran for me (oat bran, raisins, vanilla, salt, spinach) and a ham sandwich for Bobby (kaiser roll, mustard and a little bit of mayo, spinach, tomato, honey ham) + his calcium chew in orange flavor (I had mine when I woke up). We wanted totally different things, but we happily ate them together. I think improvisation and eating what you crave is important, so I don’t always stick to what I have written down. As long as I use up what I have in the fridge and I don’t waste much, I’m happy. How about you? Do you stick to the plan (if you plan) or do you play it by ear?

Menu for the Week of April 26 – May 2

Sunday – dinner at Pho Little Saigon (pho)

Other Dinners -

squid sauteed with leeks (monday i think) & rices

leftovers (tuesday)

stuffed portobellos, steamed kabocha & a protein (chicken/tofu/fish)

hugh jass salad & a carb

make your own spring rolls (with shrimp) & peanut dipping sauce

salad with burdock kinpira & a protein (tofu, chicken, or seafood)

eating out one night

Lunches - Big salads (romaine, spinach base; kabocha & random veggies for topping; parmesan & bacon bits; various dressings), tortillas, brown rice & butter, omelettes, burdock kinpira

Breakfasts - green oat bran, brown rice mixes, yogurt cake (for Bobby; I need to use up the yogurt that I bought before it goes bad)

Desserts – fruit, milk ice pops, possibly some tofu pudding (silken tofu blended with sweet things), maybe a white fungus dessert (I’ll do a post soon on white fungus since so many of you are curious!)

If you ever have questions about anything that I post about, PLEASE ask! I love answering questions and I try to respond to every one. I’m going to update my FAQ page, so this is an open call for anything you want me to talk about – advice (health, yoga, life, whatever), things that I eat (like white fungus or kabocha), exercise (walking, yoga, etc…), my past, my future plans, my jobs (tutoring, teaching, blogging, and some other randoms), my cat (Couscous the tabby), my boyfriend (Bobby; we’re about to hit 3.5 years in a month), my family, ANYTHING! Just ask I’ll keep reminding you because I want to get lots of questions.

We went out for Vietnamese tonight at a new place about a mile away from our new apartment. It’s called Pho Little Saigon. We both got pho (noodle soup) of course! Bobby got something beefy and I got one of the non-beef options:

It had 2 pieces of each: shrimp, squid, chicken, pork, fish balls, and fish cakes. I ate all of the meats, all of the veggies (sprouts mostly) and some of the noodles. I dipped everything in hoisin and chili sauce (on the left). I had a few bites of Bobby’s beef soup, but the broth was pretty oily… though the beef was amazing tender and lean.

The only problem with this place (which I discovered once I got home) is that they use a ridiculous amount of MSG. I should have assumed, because most pho places use it. After I eat MSG I get this pressure in my temples and my head feels tight. It’s kind of like dizziness, but it’s more just a weird sensation. I’m not sure if we’ll go back. I love pho but I hate the way MSG makes me feel. Does this happen to anyone else?

I’ll be back soon with my Monday menu plan…

Last night’s dairy (ricotta) was okay with my stomach – I felt slightly bloated when I went to bed, but I woke up fine. Good!

I woke up around 8:30am this morning when Bobby’s alarm went off. I puttered around for a while, then I did the 30-day shred workout without the video (OnDemand was broken, but luckily I have it written out HERE). I also did 15 minutes or so of the 20×20 method’s perfect pilates. It was kind of a ballet/yoga routine – I like workouts that incorporate yoga.

I showered and made breakfast – a heart healthy serving of oat bran (3/4 cup, for those wondering!) with half a large banana, cinnamon, salt, and some PB2. I also had miso soup (wakame, red miso).

Lunch (around 2pm) was an Ezekiel pita with peanut butter, carrot sticks, broiled swiss chard, and homemade ketchup.

I did some yoga (25 minutes on my own), and then around 4pm I had a snack of yogurt – Strauss Family Creamery Organic Maple Nonfat Yogurt. Now I am kind of pissed – the nutritionals on the package and the nutritionals online are different. It looks like the ones on the package were calculated incorrectly, so I’m going to go with the ones online. Nutrition facts (per 1 cup serving): 170 calories, 0 grams fat, 30 grams carbs, 12 grams protein. I had a little less than a cup, plus some kamut puffs, cinnamon, and PB2.

My stomach did not like this yogurt so I decided to bake something with it to use it up. My dairy experiments are not looking good – maybe dairy just does not agree with my tummy. After the yogurt I went for a few squares of my unsweetened pom jelly.

My yogurty baked good was kind of an oat bran cake. I cut it into 40 squares, and each square has a little less than 40 calories. I had 3 to make sure they tasted good – they did! I’ll post the recipe tomorrow.

For dinner I walked into Mountain View to meet Bobby at the train station. We went to Xanh, a trendy Vietnamese place. I got the Xanh Salad (made vegetarian with tofu instead of beef). It is huge. Here’s the description: marinated beef (fried tofu), mixed greens, yellow and red bell peppers, sliced mango, sliced green apple, avocado served with vietnamese crackers, white sesame, and XANH sauce. There was definitely pineapple in there too. It was incredible.

I ate everything except for a few bites of tofu (to Bobby) and part of one of the crackers (I had the whole bottom one and part of the top one). I wasn’t going to eat the humongous crackers that it came on, but I tried one, and couldn’t stop myself… It comes in two layers – here it is separated:

After we got home I had a few more squares of yogurt cake for dessert, and now I’m just sitting on the couch relaxing. Bobby’s going to the convention tomorrow too, so I have another free day. Farmers’ market perhaps? What was the best farmers’ market you ever went to? I love the one in Ithaca, NY – fabulously amazing prepared foods, and the best flatbread pizzas I’ve ever had.

Menu Plan for the Week of February 1 – February 7

Sunday Dinner - Homemade pizzas, superbowl snacks (homemade hummus, celery, crackers).

Monday Dinner - Vietnamese Mixed Vegetable Soup (onion, tofu, greens, sprouts, tomatoes) with rice or couscous.

Tuesday Dinner - Soba noodle sushi! Cucumber, tofu, avocado, sprouts, & soba noodles wrapped in seaweed. Wasabi and soy sauce for dipping on the side.

Wednesday Dinner – Steamed mushrooms, tofu, and rice or couscous (plus chicken for Bobby).

Thursday Dinner – Tofu scrambles with leftover veggies.

Friday/Saturday Dinner – one night out; one night Curry (pineapple, tofu, water chestnuts, red pepper, onions, etc…) served over rice or couscous. If it’s good I’ll post the recipe. (This was planned for last week but I didn’t get to it.)

Desserts: Gliding Calm’s crazy cake (had this tonight, it was awesome, I’ll write about it tomorrow because I changed the recipe), fruit, yogurts & granola, oranges, vanilla soy ice cream, and Fraiche in Palo Alto.

Lunches: omelettes, fruit and yogurt parfaits, nut butter sammies, hummus sammies, lunch meat sammies for Bobby, veggies, fruit, and leftovers. (Pretty much the same each week, but sometimes I get creative at the last minute.)

More great menus can be found at Organizing Junkie!

I will try to get up as many of these recipes as I can; sometimes it just doesn’t happen! I stuck to my menu plan from last week pretty well, but we ended up eating leftovers one night and then omelettes instead of the curry. I love curry so I hope that I get to make it this week. I’m also trying to use up some stuff in the freezer (most of it seafood/meat that Bobby needs to eat) so I may try to throw some of those things into his lunches (if he’ll let me).

What are you most excited about eating this week? I loved the crazy cake tonight and I’ll definitely be making it again.

I made Bobby oats for breakfast! He liked them very much. He grew up having oatmeal, but got bored of it (no fun toppings).

In Bobby’s bowl:

1/2 cup oats, 1 cup water + a splash

salt, cinnamon

handful of raisins (added while cooking)

1/4 cup granola

~1-2 tablespoons sunflower seeds

some Wildflower California honey

Bobby says: “It was very good. The sunflower seeds made it a little too salty. Raisins were good. Honey was good. Granola was good. But sometimes I couldn’t tell the difference between granola and oatmeal because they’re both oats! It was fun to eat it with a spoon.” He’s in a silly mood.

In my bowl:

3/4 cup heart-healthy serving, 1.5 cups water

cinnamon, salt, vanilla

1/4 cup chocolate almond milk (added at the end after it’s in the bowl)

spoonful of Better’n Peanut Butter

I also did a lovely hip-opening yoga routine this morning. It was free of course! Check out Eoin Finn’s podcasts. The class I did this morning was called Tragically Hips, and really focused on getting loose. Eoin started out with some very quick sun salutations (A and B), then moved onto some vinyasas, sitting poses, and minimal ab work.

This is not an mp3 for beginners – not that the poses are too difficult, but he focuses less on the basic instruction (“inhale, look up, exhale, fold forward” type of thing) and instead on other types of guidance. He pointed out some mistakes that I had been making, probably because after a while we all become comfortable in our own routines. I liked this a lot actually. The pace is quite quick at first and if you were new to yoga you could become lost.

The only modifications that I made were to skip his 2-minutes of forward bending at the end (I hate forward bending) and do wheel instead. I also did headstand at the end for a good 2 minutes. This was actually my best attempt at headstand yet. My feet tapped the wall once when I went up and I managed to hold it after that. I was very happy.

This afternoon I’m going to make my week’s menu plan, and probably go for a leisurely walk with Bobby. We’ll watch the superbowl, but I’m only in it for the commercials! Who are you rooting for? I guess I’ll go with the Steelers because I’m from PA/NJ.
