Recipe: Maggie’s Macro Plate

Last night I got dinner with Laura, one of my oldest friends (from middle school). She was in town with her boyfriend just for the day and we managed to get together to have dinner. So glad we got a chance to reconnect. We were going to go to Souen, but I decided last minute to take them to Good Health Cafe, which is closer and a little bit less scary for non-macrobiotic people. We talked and talked, and before we knew it it was time for them to grab a taxi to catch the train back to New Jersey.

One thing that Laura mentioned during dinner was the fact that my blog is not so much a recipe blog anymore! I hadn’t realized it, but yes, it’s true – I don’t really cook as elaborately now, but I do make things. So it is time for me to share a macrobiotic re-creation that I’ve been having for lunches recently. It’s called a macro plate, and it is vegan and macrobiotic. I get it all the time when we eat out at macrobiotic restaurants.

My Macro Plate Tips (skip down for recipe):

  • This is very easy to throw together – you do not have to make everything at once; you can prep each ingredient in advance and just toss them together when you need a quick meal.
  • Roasting the squash – you don’t necessarily have to roast it, but I do. You could also steam it. For roasting I like a certain seasoning (oil, soy sauce, rice vinegar, and sesame seeds – see below), but the way you roast (or steam, etc…) the squash is completely up to you.
  • Beans – sub in any kind of beans you like. I use canned beans because it’s quick, but you could make them from scratch as well.
  • Greens – again, you can use any kind of greens. I use pre-chopped ones from Trader Joe’s because it’s very easy that way.
  • Extras – other typical macro plate ingredients are: hijiki seaweed, steamed broccoli and cauliflower, and steamed carrots or daikon. Add as desired!

Maggie’s Macro Plate

Ingredients (serves 1)

  • 1/3 cup dry brown rice
  • 3-4 cups raw chopped greens (collards, kale, spinach, etc…)
  • 1/2 cup black beans
  • 2 cups uncooked winter squash (acorn, butternut, kabocha, etc… – this is acorn)
  • for roasting squash: sesame oil, soy sauce, rice vinegar, sesame seeds (all optional except the oil)
  • ~1/4 cup of my miso-tahini dressing (click for recipe) (about 2-3 times the amount the recipe makes – just double or triple as desired)

Method

  1. Roast the squash: I first mix it with a few glugs of sesame oil, then sprinkle some soy sauce and rice vinegar over it and mix again. Top with some sesame seeds and cook at 375 for 1 hour (or at 450 for about 40 minutes). You can roast or steam the squash with whatever oil/flavorings you desire.
  2. Cook the rice: I cook 1 cup of rice at a time in my rice cooker. It comes out perfectly fluffy. Then I just scoop out about a third of it for my meal.
  3. Steam the greens: if you are lazy like me you can sprinkle them with water and microwave for a minute or so.
  4. Prep the beans: rinse and reheat as desired (I actually like mine cold/room temp so I don’t reheat).
  5. Make the dressing. It is so simple and delicious!
  6. Prep the plate: brown rice, beans, greens, squash, and any other extras (see above for idea under “tips”). Serve with dressing. I like to mix it all up and eat it together.

So that is the “macro plate” that I’m always talking about. I haven’t experimented with different dressings, but I keep meaning to. This plate is supposedly a “perfectly balanced” meal – protein, carbs, and fat, all in the right proportions.

Recipe: Green Mung Bean Seaweed Coconut Delight

Maggie’s Green Mung Bean Seaweed Coconut Delight

Ingredients (makes 2-3 servings)

  • 1 cup dry mung beans (mine were split)
  • 3 cups of water
  • 1-2 tablespoons coconut oil
  • a few handfuls of dried seaweed (wakame is good)

Directions
Dump everything in a pan. Bring the water to a boil, then turn it down to a simmer. Cook, covered, until beans are done. Depending on the beans this could be 40 minutes or it could be an hour and a half. Just keep testing them.

It is AWESOME. I promise. Chockfull of (good) protein, vitamins, and minerals. It even has some healthy fats (coconut oil).

The trick about the oil is that it keeps the water from boiling over. You must use the (healthy) oil.

Souen Again: The Best Dinner Ever

Remember Sunday’s best lunch ever? I went to Souen with Bobby and I loved the food. Well, now I’ve had the Best Dinner Ever. We went to Souen last night (the Union Square location) and it was really awesome (again).

Last time Bobby didn’t like his meal much (I think he ordered the wrong thing), but last night was so different. He started out with a natto roll (fermented soy beans, brown rice, seaweed, and wasabi and ginger) ($4.00).

Then our main dishes came out. I got the Planet Platter ($8.50! great deal), which is very similar to my brunch last week. It’s a huge plate of brown rice, beans, steamed kabocha squash (!), steamed kale, hijiki seaweed, steamed daikon, and steamed carrots.

Ahh, it was heavenly. I got the miso tahini dressing (again). I am a creature of habit, yes. I finished almost all of this at the restaurant; brought home some of the rice for later but caved and had it as a midnight snack.

Bobby got the Chick Pea Croquette (3 pieces of deep-fried chick pea croquette with curry carrot sauce; served with yam and mesclun salad) ($13). It came with veggies and brown rice.

I tried a piece of a croquette at dinner and we took the 3rd croquette home (he was full from the sushi)… which I had with my midnight rice snack. Yum! These were really good but really garlicky – my mouth was so gross this morning, even though I brushed my teeth really well.

I am actually off to Souen again (Soho location this time) to meet a blogger – I have not decided what to get yet. I think the menus are different at each location. I also want to get my nails done today! I haven’t gotten a mani or pedi in ages.

Long Busy Day + Cake

Today was the longest day. The internet was down at work all day (and I was the one on the phone trying to get it back on again) and now I think my blackberry is dead! At least I have cake.

I bought this chocolate piece of heaven on Saturday during my Whole Foods trip with Marina; Bobby and I broke into it last night (it was one of my Valentine’s day presents to him). Then we had it again tonight – it is a chocolate cake with rich fudgey topping.

I wanted to share one of my presents from Bobby:

Sabon soap! This one is a coconut and olive oil base, and it’s vanilla and coconut scented. It’s great for the skin. I adore Sabon and it’s closeby.

After dessert (pictured above) I had dinner:

  • goodies: bacon and coconut oil and whipped cream cheese
  • healthies: Brussels sprouts, broccoli, peas, and corn
  • spicies: cinnamon, chili powder, garlic powder, and Kikkoman ponzu sauce from Foodbuzz (love this stuff!)

I also had some black beans. My acupuncturist told me to eat black beans so I obliged. I topped them with some maple syrup, salt, and more whipped cream cheese (Heather, I blame you for this addiction!). I think I will have to try without the syrup next time – too sugary.

Moving on… I wanted to do an exercise update. I am back to my gentle routine of walking, and I couldn’t be happier. I walk to work in the morning (2 miles) and I try to get in another half mile or so throughout the rest of the day (running an errand for example). I haven’t been doing as much yoga. I did do my DVF exercises (Diane von Furstenburg exercises) 3 times this past week though. They are relaxing stretching moves.

Just goes to show, you don’t have to exercise a lot to stay thin! Moderation is the KEY. (I can say this but moderation is still the thing I struggle with.)

Another cool thing I’m doing right now is soaking my feet in hot water with epsom salts and lavender (it’s a lavender oil that the sweet Clare sent me for Christmas). Both Coco and my acupuncturist recommended this, so I figured I’d give it a shot. It’s relaxing but the water cools quickly and I have to keep reheating it.

I am off to do some work that I did not get done today (no productivity since there was no internet). I’m glad I have blogging to de-stress 🙂
